I either read or dreamed that I read in one of the SHTF preparedness manuals that one of the religious orders usually has a canning facility set up in their halls so members can get ready for the future and save via economy of scale. There’s a whole slew of things that I want included in my food storage pantry, but many of them don’t lend themselves well to the canning process (chocolate!), can’t be dehydrated (walnuts!), or aren’t a great candidate for the classic 5-gallon bucket (sunflower seeds!). Packing these foods in canning jars and then using a vacuum sealer, such as a Food Saver, to store them long-term is super easy.

I've had a vacuum sealer for several years and I love it! I bought it because I was tired of freezer-burn on the meats in the freezer, and for sealing veggies in bags to freeze... but I haven't been using of all the functions... like vacuum sealing dry goods in mason jars.

I am an avid canner, and I also buy flour in bulk. I was intrigued by the 15-20 year storage life for canned dry goods. If you like sales and buying extra flour, rice, dried beans and cornmeal, this may be a great help to you! You don't need a pressure canner, just your oven.

In lousy economic times, these newly learned old skills give women a bigger choice of where to spend money. They can cut corners by mending, canning, and growing a garden. I was insructing my Daughter into theymystries of CanningPickels. She is a Graduate of Culinary School along with several other degrees which added nothing to her employabilty. I bought a cheap mandolin to insure consistant thickness of the cukes we were slicing, she proceeded to cut the tip of a finger off, The blood, the blood, after doing first aide I sent her off to the ER. Is this normal? I mean cooks deal with sharp stuff, how many fingers lie at the bottom of our salads?

There was a very short news item on the late news Monday evening. It was a statement by the manager at a local hardware chain that said that the canning goods (jars, lids, etc) were literally flying off the shelf and he was selling the stuff as soon as he could unload it off the truck.
