Max Miller deep dives into pancit, the ubiquitous Filipino-Chinese dish. I thought this might be relevant as there are simply so many Filipinos and their descendants in the US that its turned into "American" food. I was surprised to find it in a Martin Marietta pot luck in Bethesda Maryland in the 1980's. Since then I don't think you can avoid it (or its typical accompaniment, lumpia) at any company pot luck!
