Get series about HEALTHY, and LOW CARB FOOD
This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

I find diets amusing, and I like food way too much. So, I'm trying the "eat less and exercise more" method, rather than saying, Adkins or South Beach.
I'm doing a lifestyle change rather than a diet.

Sounds delish! You cook, I'll enjoy. I haven't purchased cheese for years. (Told you I'm kitchen-impaired.) However, I do grind my own burgers from zero fat beef in one of those wonderful VitaMix machines that would grind up a Volkswagon.

Oh good. That's basicly what I'm doing too. I lose really fast on Atkins but I feel bad all the time. I'm losing slower than you are and I know its because of the carbs. I'm not going to give them up (no way, mmmm lol) but I am trying to cut back.

Are you tired of eating eggs or are you just tired of making eggs? I hard-boil a dozen eggs at at time and have two each morning for breakfast. So I'm boiling eggs only every six days. Also with the eggs, I microwave 4 slices of bacon and have a cup of yogurt - always with berries. Such as blueberries, raspberries, strawberries, etc. Berries are good for you on a low-carb diet.
My sweet tooth is basically gone. The yogurt I eat in the morning tastes like ice cream to me because it is the sweetest thing that I eat.
I suppose you could get away with eating bread with sandwiches every now and then, preferably whole wheat bread. Don't make a habit of it though. I would stay away from cereal forever. Just my opinion.

Hey there, here we go again...LOL
Chicken Little Carbs Cordon Bleu This is a outstanding, easy, fast, low carb, winner.. try it and pass it around!
- 4 boneless skinless chicken breasts
- 8 slices of Italian prosciutto ham, cut paper thin
- 4 oz Bleu Cheese (or Swiss if you prefer)
- 1 Tablespoon melted butter
- 1 Large egg; beaten
- 3/4 cup freshly shredded Parmesan Reggiano cheese
1) Pound chicken breasts to about 1/3" thick.
2) Place ham on breast then 1/2 oz of bleu or swiss cheese.
3) Roll up; securing with a toothpick.
4) Dip each breast-roll into a mixture of the melted butter and beaten egg.
5) Roll in Parmesan cheese and place in buttered baking dish.
Bake at 350ºF for 30 to 35 minutes or until browned and tender.
Serves 4. Less than 1 gram per serving.

Splenda Ketchup In a large pan combine:
1 6 ounce can of tomato paste
2/3 cup cider vinegar
1/3 cup Splenda granular
1 small onion diced
1/2 bell pepper diced
1 teaspoon salt
1/8 teaspoon cloves
1/8 teaspoon allspice
1/8 teaspoon pepper
1 large can of whole tomatoes or a quart of home canned
Cook down the mixture until it is thick on a medium low heat. Let it cook and then put it in your processor with the chopper blade and and make a puree. Then strain into a couple of pint jars.
1 tablespoon has 2.25 grams of carbohydrates, a trace of fiber and a trace of protein.
Cocktail Sauce 1/4 cup of Splenda Ketchup
1 teaspoon prepared horseradish
3 or 4 drops Tabasco
1/2 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
This is a lot better than any of the sugar free stuff you can buy, and the cocktail sauce is great with shrimp.

Try to find a store that carries a full line of Atkins products.
They make varied candies with only 2 carbs pkg., canned Shakes & Shake Mix 2 carbs serving, Ice Cream 3 carbs serving, low carb pancake batter, syrup, Muffins .....
I was surprised to find that K-Mart has a pretty good selection, in the Pharmacy dept.
Now I have two things to buy there, Atkins & motor oil.
