Made with unaged, curdled milk with a mild, salty flavor and a springy, rubbery texture, cheese curds are known for the "squeak" they make when you bite into them. They are a natural byproduct of the cheesemaking process, most commonly cheddar.

If you've never tasted fossilized cheese curds, you have truly missed out on one of life's ethereal delights. We usually think of aged cheese as taking a few years to achieve that special peak of umami. Now imagine what heights of savory experience could be created after a few million years!

I’ve sampled just about every cheddar in the state of Wisconsin. The winner was Hooks 12 year.
I don’t disagree! When we were dating, Beau used to ply me with things like; pork loins, organic roasting chickens, winter squash from his garden and 7 year Cheddar. Oh, and a lighter log splitting maul that I could actually LIFT, LOL!
We have some (only) 4 year Cheddar in the house as I type. I guess he doesn’t need to spend Big Money ‘on the cow’ anymore. ;)
