I'm always looking for new and different things to do with vegetables in a low-carb way. I found a recipe and tinkered with it the other day, and the result was very good:
Summer Squash Casserole
1 lb Yellow Squash, or mixture of Yellow squash and Zucchini ( 2-3 med) in 1/4 inch slices (can use frozen)
1/2 onion, chopped
1 garlic clove, minced
1/2 cup mayonnaise
1 cup shredded cheese, plus extra for topping
1 egg
Beau Monde seasoning, Season-All, or seasoning mix of your choice
1/4 to 1/2 Cup chopped Pecans
Steam squash onion and garlic together until tender.
Mix together the Mayonnaise and egg until smooth, and add cheese.
Add squash and seasoning to taste, and stir together gently.
Pour into a greased quart-sized casserole dish.
Top with additional shredded cheese and then the chopped pecans.
Bake at 350 for 40 minutes or until bubbly, cheese is melty and pecans are toasted.

my mother has a very similar squash casserole recipe... I think she uses bread crumbs on top, instead of pecans.
Yes, the original recipe that I found used bread crumbs, or Panko; but those don’t go with low-carb dieting, so I replaced with the chopped pecans. They get toasty in the oven, and add real interest.

I just finished the last of the Turkey soup now bring on the Christmas ham.
I usually buy it once per month - it lasts a long time in the fridge, and we use it a lot for low-carb cooking. But there are times when there is none left, when I get to the store.
Especially now, folks are probably buying it up for Egg Nog :-)

That squash casserole is a real crowd pleaser in her household. I believe she sometimes gives Swiss Chard stems the same treatment... VERY good.
Elephant Stew
1 elephant (medium sized)
Brown gravy, some carrots.
2 rabbits
Cut elephant into bite size pieces, add brown gravy and cook for fourteen hours at 465F. This will serve 3800 people. If more guests are expected, add two rabbits. But do this only if necessary as most people don't like hare in their stew.
I baked 3 turkeys this season ,,, and each one has produced much more liquid than I remember in previous years.. I’m thinking that the processors are injecting the legal maximum of brine because of the chicken/turkey virus that had egg prices so high a few months ago...

My birthday falls around Thanksgiving, and I received a couple of really cool cooking gifts - including one of those roaster ovens that sit on the counter, and can bake your ham while you use the big oven for the sides.
I had gotten into a conversation, on another thread, with a Freeper who had one and highly recommended it; and a little later we happened to be in the Target, where they had one on sale for 27 bucks! I said, “Buy me it!” and Husband bought it for me, and said ‘Happy Birthday!’ :-)
It’s definitely not the best - I wouldn’t cook a big turkey in it, and if you want one, I would suggest that you spend a little more money; but the one we’ve got works pretty well for our purposes. I tested it on a big casserole, and it came out fine; I think it will do well with a ham. As one reviewer said on Amazon: “It’s a metal box that gets hot”.
I’m anxious to try the ham in it.
