HELP KEEP THE LIGHTS ON: First Quarter '03 FReepathon Now Underway .. Thread 6

The Free Republic first quarter '03 FReepathon is now underway!
Our goal for this fundraiser is the same as last quarter: $65,000. We have about $4,000 per month coming in from monthly donors so we will need to raise approx $53,000 to hit the target.
The funds raised through these fundraisers are used to pay our operating costs. Free Republic operates on an approximate $260,000 annual budget (breakdown here) and all funds are provided by donations from FReepers and Lurkers.
Thank you all very much for your continued support.
P.S. We are planning to make FreeRepublic.com email addresses available as a thank you to all who donate at least once per year. This new feature should be ready to go within a few days. We will post a notice and a link for donors to setup their FR email address as soon as it's ready.

Here's the recipe:
BEER BUTT CHICKEN
2 whole roasting hens, washed, giblets removed
2 12-ounce cans of beer, washed and oiled
4 cloves garlic
2 cups wood chips (hickory, mesquite or apple), soaked
Chicken rub:
1/4 cup kosher salt
1/4 cup brown sugar
2 tablespoons paprika
1 tablespoon ground cinnamon
Dash of chili powder
1 teaspoon freshly ground black pepper
Mix the rub with a fork, then massage it into the birds, inside and out. Place in plastic bags and refrigerate for at least four hours.
Pour out a third of the beer. Add two smashed cloves of garlic to each can. Oil the cans and mount the birds, drumsticks down. This takes three hands, one to hold the can and two to mount the bird.
Bring your covered grill to an even heat. Stand the canned chickens upright, forming a tripod with the legs and beer can. Throw on the wood chips. Stick a meat thermometer into the breast, not touching a bone. Cover and smoke. When the thermometer reaches 200 degrees, theyre done. This took about 90 minutes with ours. Then prepare for a stampede to your patio table. Serves 6.
Disclaimer: I am not a beer lover, in fact I somewhat despise the stuff because of, well, we won't go into that. I also detest food cooked in alcohol of any kind. But this method of cooking chicken is really really great, in fact, I bought a huge can of beer and did my turkey this Thanksgiving in this same manner. Best turkey we've ever had.

Once when my OLDER brothers were in school .. back in the old days when the nuns use to wear those really long habbits with the mountain high
hats veils
Well when the kids walked out of school to go home for the day they had to have their rosaries in hand and say them as they walked
Well of course some kids would always forget them .. so my OLDER brother came up with a great idea to break pieces off and give them to his friends that forgot them so when sister asked where the beads were the kids would wrap it around their hand pretending to be holding the whole thing in the hand
WELL one day sister made them open their hands only to find they only had a piece of the beads ..
My mother got one heck of a phone call from sister that night .. FOFL

I love beer and using alcohol in my cooking - but I understand what you are saying.
Even people I know that hate beer, love this way of cooking a bird.
You would be amazed at how many people have come to my door looking for a can of beer to cook their bird this way!!!
I don't know what it is about it - but it works.
Another good one is Dr. Pepper.

I was thinking about trying the recipe with soda pop. Thanks, I'll try the Dr. Pepper next time. I don't bother with all the spices and sugar anymore, either. I just rinse the poor naked beast, coat it in kosher salt, let it sit for an hour, rinse all the salt off, sprinkle it with garlic and grill it. Tonight, hubby checked it so often with his temperature fork that it had holes all over it when I sliced it LOL. (I think he was hungry).
