First Quarter '03 FReepathon Now Underway - Thread 2

The Free Republic first quarter '03 FReepathon is now underway!
Our goal for this fundraiser is the same as last quarter: $65,000. We have about $4,000 per month coming in from monthly donors so we will need to raise approx $53,000 to hit the target.
The funds raised through these fundraisers are used to pay our operating costs. Free Republic operates on an approximate $260,000 annual budget (breakdown here) and all funds are provided by donations from FReepers and Lurkers.
Thank you all very much for your continued support.
P.S. We are planning to make FreeRepublic.com email addresses available as a thank you to all who donate at least once per year. This new feature should be ready to go within a few days. We will post a notice and a link for donors to setup their FR email address as soon as it's ready.

Fritters is exactly what I did make with them - although not with crackers.
I had never eaten clam fritters - but these were the lightest tastiest fritters I have ever eaten - and we were discussing at the table tonight how next we will use this recipe.
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
2 large eggs
1/4 cup beer
the original recipe called for chopped cooked shrimp along with a chopped onion, a chopped jalepeno, 4 minced cloves of garlic and 1/2 teaspoon of thyme.
because of the little one I didn't use the jalapeno and diced up some green bell pepper along with the onion and garlic.
what's great about it was that it called for sticking it in the refrigerator for at least 2 hours. so I was able to make it early and all I had to do when it was time to cook was heat the oil and drop the babies in!!!

Getting RATHER personal, aren't you? These non-rhetorical questions are SO hard! :-)
Actually....we owned one cat, Alexander. He died 2 weeks ago from kidney failure.
Alexander deigned to grace us with his presence for over 11 years---after showing up on our doorstep as a skinny 6 mo. old kitten. Not wanting a cat, I put a dish of milk on the deck and left for work. I came home to find him gone. HOORAH!
About an hour later there came a knock on the door. Here were 2 teenage girls, carrying this scrawny kitten. They were VERY apologetic that while taking a walk, OUR cat had followed them home so they were returning him.
The rest is history.

I remember my mother made a tuna casserole that had potato chips in it when I was a kid. That and Tuna Helper (like hamburger helper) so turned me off of cooked canned tuna as not to even be funny. It's probably why I'm not real crazy about any kind of cooked salmon dish made from canned salmon.
I love canned tuna as long as it's not cooked - when I'm not in the mood to fix even a simple sandwich I'll just open a can of tuna and grab a fork!! But I don't like fresh tuna.
Salmon, on the other hand I prefer not out of a can. I much prefer it fresh,so to be grilled or baked or sauted, etc.......and of course there is my perenniel favorite LOX!!!!!
