Get series about HEALTHY, and LOW CARB FOOD
This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

When I roast my chicken I take a lemon and jab it with a fork two or three times and place it in the cavity of the chicken and roast. The chicken is very moist and has a faint lemon taste that is luscious and the lemon tenderizes the chicken as well.

Snacks? You want snacks? A snack you'll get!RJayne beat me to it with Oven Cheese Crisps, but the one I do is in the m'wave. I don't know if it originated with Atkins, but South Beach does it with lo-fat cheese.
Use the cheese you wish, and put about 1/4 cup on an oiled microwavable plate and nuke for 45 seconds to 1 minute or more. It will melt, bubble and then firm up. Let it get just a little tan color to it. When it cools, it will be crisp.(Factor in the power of your m'wave and the amount or kind of cheese you use.)
2% cheddar shreds take about 1 1/2minutes in my m'wave, while non-fat takes about a minute. You can make a large chip, or little round ones.
Here is a link to a more descriptive recipe. I don't bother with all the paper, I just spray the dish with Pam and nuke away.

When I roasted my last chicken, I peppered it on the skin, and infused it with lemons (and then stuffed the rest inside the cavity.) The chicken turned out to be fork tender.
I won't mention what else I fixed with it, 'cause it might induce Laz to snap on his 3 state killing spree. 8-)

For cocktail sauce, I use Estee brand Ketchup (no added sugar). It is usually found with Diabetic foods in the stores, here in NJ.
I simply mix some hot horseradish and Worcestershire sauce in it. Wanna get it real hot? Go for the tabasco!

I'm really fond of getting pepperoni (the presliced, ready to eat kind) and nuking them til they are crisp.
Handy snack and no carbs.
Nuking a plate full is about 3 to 4 minutes depending on your microwave. Just cover the plate with papertowels first to catch the extra grease as they crispify.

I, too, am in disagreement with the ADA's guidelines. My husband is a diabetic, and the carbs the nutritionist allows him is totally absurd. I've been on a modified Atkins for about a year (50 to 60 carbs/day). I've finally convinced him to join me in this effort. His cholesterol, triglycerides, glucose levels have all dropped considerably. And we're even using real butter and mayonnaise....and a lot of olive oil. As well as the low carbs, we eat lean meats, fish, buffalo, cheese, salads, berries, vegies....anything we can drench in bleu cheese dressing. Splenda has been a lifesaver (tastes so much better than Equal and Sweet'n Lo)
And we still have a piece of fruit a couple times a week.
Moderation in all things is a good thing.
