We aren’t new to the question of “What does goose taste like?” in the poultry community, especially when most of the world eats chicken.

Contrary to popular beliefs, goose is popular in different parts of the world.

According to GQ, Roast Goose is a daily dinnertime centerpiece in places such as Turkey, Germany, Hong Kong, China, and parts of France like Alsace.

Seems like a goose was a big deal in Dickens England, and they didn't have turkey.

Tried duck, so so, never had goose.

Canada goose is okay. Edible but not great. Best meal you ever had if survival is at stake.

Never tried domestic.

I imagine its close to duck... oily/greasy... never indulged myself...

Goose is similar to duck. All dark meat. As duck is my favorite, I enjoy goose as well.

My mother made a roast goose once when I was a kid. She couldn’t believe how much fat it released. It was a big topic. I don’t really remember what the goose tasted like, but as an adult I am very fond of duck.

I’ve never eaten Canadian goose, but I would think it would be kind of gamey tasting.

I have nothing against waterfowl. I think they’re magnificent animals. However their meat is gamey and so rich that I can only eat one bite and then I cannot eat the rest. I’ve tried a number of times and I just can’t stand the meat.

Everyone’s pallet is different but I think that’s why pretty much everyone prefers chicken to duck.

Roast goose is delicious, IF made correctly.

Yes, it's eaten in the UK, Austria, Hungary, Slovakia, The Czech Republic, and Germany. It goes well with red cabbage, lentils, roasted or other crispy potatoes dishes, and an orange based, or brown gravy.

All of the meat is dark/like chicken legs/thighs and is a bit like roast duck.

Goose doesn’t taste good to me. Tons of grease and not much edible meat. There is a reason nobody ever launched an “Alberta Fried Goose” chain - though they do have similar restaurants in China. :)

I’ve had wild goose on the Eastern Shore, shot by a friend. I think I liked it, at least I don’t remember it being unpleasant.

I’ve liked duck better.

A lot of the fat is rendered out in cooking. I know a guy that claims the volatile oils from a goose ignited and blew his oven door open, once.

Indeed a bit gamey. I breast them out and put it in the crockpot with a can of Cream Of Mushroom soup and a bag of mixed frozen veggies and put that on smashed taters.

Not horrible.

There’s probably a big difference between domesticated geese and wild ones.

Neither duck nor goose is "oily"/"greasy" and IF that's what you've eaten, then it was cooked badly and just plain old WRONG!

But the meat is what one would call "rich".

It taste like duck, only geese are mean, vicious little buggers. My parents had geese on a pond and those beast would sneak up behind me just to bite my legs while I fished there. I wasn’t bothering them, I didn’t start out near them, they were just mean.

When I got married I slaughtered on of those birds for the wedding banquet so I could bite it back.

Duck and Goose hunter here. The best tasting goose to eat is a Specklebelly. They’re great, especially if cooked in a smoker.
