Hi all..I have never seen (or heard of) lemon curd. for some reason it does not sound to appealing. Curd & Crud are almost the same - word wise, it could be just that matter,huh?
Need to get mowing before it heats up.. later everyone

I don't know what lemon curd is but I will see if I can find some so I can try it.
Do you eat cottage cheese? I eat cottage cheese with canned pears. When I hear curd, I think of cottage cheese or curds and whey. :)

never thought of cottage cheese as "curd" - but you are right. One thing I make for mom & I for breakfast now & then (I usually do NOT do breakfast) is a combo of cottage cheese and lemon yogurt (a few dallops on plate) and then an assortment of whole almonds, fresh strawberries & canned pineapple. No added sugar. It is quite good. In fact I think I will put some together now. She has been sleeping all morning & I just came in from mowing break. Pretty warm out there but still overcast so a blessing. I do over an acre with an electric push mower. You can't imagine how much fun that is.

I need to try the cottage cheese with lemon yogurt with some kind of fruit. It sounds very good.
My mom put cottage cheese in half of a canned pear, topped it with a little mayo and a dash of paprika. This 'salad' was always a treat. I don't remember ever eating the lettuce leaf that she placed under the pear. Guess I thought it was only for decoration. :)

PS .... pushing a lawn mower in the heat isn't my kind of fun. :) An acre ...... I'm impressed.
WE pay a gardener to do the mowing and a little weeding. We still are forced to spend time doing the weeds or they take over.

I think you will like today's celebration. :)

Strawberry Mousse Parfait
Ingredients:
Serves 1
1 1/3 C quartered Strawberries
1 TB Sugar
1 tsp fresh lemon juice
3/4 tsp unflavored gelatin
1 1/2 TB Water
1/2C Chilled Heavy Cream
3 Butter Cookies Crushed
1)Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large bowl,dice and set aside.
2)Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
3)Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
4)Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
5) In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.

Lemon curd is used the same way as you use jam or jelly the texture of it is like set sauce I suppose like a set yogurt but the taste is different. The thickness and texture of say chocolate spread but of course a sweet lemon flavour. You can use it like you would jam or jelly I like use it for jam tarts.
Another name for it is lemon cheese which like jelly is sieved and it actually better if you are going to cook tarts with as it does not boil over.
Here is our most famous brand of lemon curd which you can buy on line at britsuperstore.com

I know that feeling but I am sure that Marissa is worth it but she must take a lot of your time up.
Manual what manual LOL in fact I must read it as well I think it is on the installation CD I would print it out but I have broken my printer yet another job to do.
