Open-Faced Spinach-Omelet Sandwich
(Spinacio Frittata con Focaccia)

Cooking spray
4 cups fresh whole baby spinach leaves or chopped large spinach leaves (about 6 oz.)
1 Tbsp. water
4 eggs
1/2 cup low-fat (1%) cottage cheese
2 tsp. Italian seasoning, crushed
1 (8- to 9-inch) plain, tomato, or herb-seasoned focaccia bread, split crosswise (about 5 oz.)
4 tomato slices

Evenly coat 10-inch omelet pan or skillet with spray. Add spinach and water. Cover. Cook over medium heat until spinach is wilted, about 1 minute. Pour out liquid, if necessary. In medium bowl, beat together eggs, cheese, and seasoning until blended. Pour over spinach mixture. Gently stir to evenly distribute mixture in pan. Cover. Cook over medium heat until egg mixture is almost set, about 4 to 5 minutes. Remove from heat. Let stand, covered, until egg mixture is completely set, about 2 to 3 minutes. With pancake turner or spatula, slide frittata from pan onto bottom half of bread. Top with tomato slices and top half of bread. To serve, cut into wedges.

Microwave: Evenly coat 9-inch pie plate with spray. Add spinach and water. Cover with plastic wrap. Cook on full power 2 minutes. Pour out liquid, if necessary. In medium bowl, beat together eggs, cheese and seasoning until blended. Pour over spinach mixture. Gently stir to evenly distribute mixture in plate. Cover with plastic wrap. Cook on full power until puffed at sides and center of egg mixture is almost set, about 3 to 4 minutes. Let stand, covered, until eggs are completely set, about 2 to 3 minutes. With pancake turner or spatula, slide frittata from pan onto bottom half of bread. Top with tomato slices and top half of bread. To serve, cut into wedges. Makes 4 servings.

For this dish, choose tuna or salmon to mix with snappy red peppers and aioli (garlic mayonnaise). After you spread this flavorful, quick-fix base in rolls and break in eggs, the neat individual servings will bake unattended while you prepare a salad or fruit course. Although Manchego cheese is authentically Spanish, it’s also quite pricey, so feel free to use mozzarella as the finishing touch on this pretty presentation.

No, that must have been before my time. But I do remember how happy I was when Edison came out with his new long-playing Gold Molded four-minute wax cylinders for his Home Phonograph to replace the old two-minute cylinders that produced the "Echo All Over This World." Do you recall it too?

Every now and again I find myself humming tunes from some of the old favorites: "All the Silver in the Silvery Moon," "Baby, Baby, from Lady Slavey," "Clancy's Prize Waltz Contest," "Cuddle Up a Little Closer, Lovey Mine," "Ev'ry Little Bit, Added to What You've Got, Makes Just a Little Bit More," "Down on the Old Plantation," and "Please, Mr. Conductor, Don't Put Me Off the Train." Those were the days my friends!

Yep, our house is too small. I read that you should have one litter box per cat. We have 2 cats and 2 litter boxes, not counting the mama and babies. Hubby wanted the mama before she had babies, then asked the other day if I wanted to keep one of the babies.

Teach me FORTRAN in '62,
From my one program input,
Cloud pictures from space on map were put,
Tons of code and cards and printouts came prior,
I learned that future geeks I would hire.
