Lets get to the heart of the matter. A model was built on a few data points of a complex system. Just like all the climate models that proved global cooling, warming, changing.
A model like statistics never gives you an answer, at best it might give you another question at best.
They built a model here on a few datapoints. The researchers hopefully understand this (sometimes I doubt this) but the public does not.

There are lots of places in the world that aren’t dependent on the electric grid.
Those dependent are going to have more trouble, but mankind will manage.
I’m currently actively trying to not buy meat to force me to delve into the depths of the freezers to avoid that sort of thing.
Diversity is not our strength, the Earth should have one single magnetic monopole! ;-)
Suspicious Observers on YouTube is one us, and has a great channel that explains the cyclical nature of the sun and its impact on the Earth. He has extensively talked about the current geomagnetic excursion happening right now with magnetic North. Currently, the pole is drifting towards Siberia at a rapid rate. It sounds like events like this happens roughly every 6,000 years. When this happens the Earth’s magnetosphere weakens which causes solar storm radiation to wreak havoc at a larger scale in our atmosphere. Remember last year when we had northern lights appearing in the southern US? Well, the storms triggering them shouldn’t have been nearly as powerful to cause the phenomenon that far south.
Would could possibly go wrong with reading the entire topic?

Modern humans, who had been around for the previous 250,000 years, picked over the remains of the advanced Neanderthal civilization, after they departed for a better, more stable planet.
What the heck is a “Blackstar?”

Primitive humans knew how to hunt, fish and gather. They didn’t have to google how to find food.
