Most people don't know that back in 1912, Hellmann's mayonnaise was manufactured in England. In fact, the Titanic was carrying 12,000 jars of the condiment scheduled for delivery in Vera Cruz, Mexico, which was to be the next port of call for the great ship after its stop in New York.

This would have been the largest single shipment of mayonnaise ever delivered to Mexico....

But as we know....the great ship did not make it to New York....The ship hit an iceberg and sank....and the cargo was forever lost....

The people of Mexico, who were crazy about mayonnaise, and were eagerly awaiting its delivery....were disconsolate at the loss....

Their anguish was so great, that they declared a National Day of Mourning which they still observe to this day....

The National Day of Mourning occurs each year on May 5th....and is known....of course....as Sinko de Mayo....

Groan .... I know, I know but it was the best I could do!!

CHICKEN AND MUSHROOM ENCHILADAS

2 tablespoons corn oil
3/4 pound mushrooms, sliced
1 10-ounce can enchilada sauce
8 8-inch flour tortilla
1/2 cup low-fat sour cream
2 cups diced cooked chicken
1 7-ounce can diced mild green chilies
2 cups grated sharp cheddar cheese

Preheat oven to 350°F. Brush 13 x 9 x 2-inch glass baking dish with oil. Heat 2 tablespoons oil in heavy large skillet over high heat. Add mushrooms and sauté until golden, about 10 minutes.

Pour enchilada sauce into shallow bowl. Dip 1 tortilla into sauce. Place tortilla on piece of wax paper. Spread 1 tablespoon sour cream across center of tortilla. Mound 1/4 cup chicken over. Top with 3 tablespoons mushrooms, then 1 tablespoon chilies and 1/4 cup cheddar cheese. Fold bottom half of tortilla over filling and roll up to enclose completely. Place enchilada in prepared dish seam side down. Repeat dipping and filling with remaining tortillas, sour cream, chicken, mushrooms, chilies and cheddar cheese. Spoon remaining enchilada sauce evenly over. (Can be prepared 1 hour ahead. Cover enchiladas and let stand at room temperature.)

Bake until enchiladas are heated through, about 30 minutes.

Serves 4.

SWEET CORN TAMALE "PIE"
All the flavor of individual tamales, but much easier to make.

1 cup yellow cornmeal
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 16-ounce container nonfat cottage cheese
1 16-ounce package frozen petite corn kernels, thawed
3 green onions, finely chopped
4 egg whites
2 14 1/2-ounce cans Mexican-style stewed tomatoes

Preheat oven to 350°F. Spray 8x8x2-inch glass baking dish with nonstick vegetable oil spray.

Whisk first 4 ingredients to blend in large bowl. Mix in cottage cheese, then corn and green onions. Beat whites until stiff but not dry in another large bowl. Fold whites into cornmeal mixture in 2 additions.

Transfer batter to prepared pan. Bake until top is golden and feels firm in center, approximately 50 minutes. Let stand 10 minutes.

Boil stewed tomatoes in heavy medium saucepan over medium-high heat until reduced to sauce consistency, approximately 10 minutes.

Cut "pie" into squares. Spoon tomato sauce over and serve.

Playing Dress-Up

You don’t have to dress up, in your finest bit of cloth,
We wouldn’t care if you came by, in cast-offs from a moth,
We’re always glad to see you, no matter how you’re dressed,
Just tell us what you meant to wear, and we’ll assume the rest.

So if some day your wardrobe is going to the dogs,
Just keep in mind we do not care, what you choose as your togs,
As long as you are seemly, we won’t call the constable,
Who knows, we might just make, all clothing optional.

The Miracle Goes On

Read: 2 Chronicles 30:21-27

Their voice was heard; and their prayer came up to His holy dwelling place, to heaven. —2 Chronicles 30:27

Bible In One Year: 1 Kings 19-20; Luke 23:1-25

Did you ever think of a prayer meeting as a miracle? That thought came to my mind one evening at church after we divided into small prayer groups. As someone in each group prayed, I heard several people talking to God at the same time. It sounded like a jumble of words. But that's the miracle. God was hearing each prayer—along with millions of others being lifted to Him around the world in many different languages.

For those of us who reach frustration levels when two children are talking to us at the same time, it is indeed a miracle that God can hear so many of His children simultaneously.

Consider the story of Hezekiah's Passover celebration. He called for the Israelites to join him in Jerusalem for praise and prayer (2 Chronicles 30:1). Multitudes came for what turned into a 2-week-long worship service. Huge numbers of people rejoiced and praised God at the same time (v.25). As the religious leaders prayed, "their voice was heard; and their prayer came up . . . to heaven" (v.27).

The miracle goes on. Today, throughout the world, millions of people are praying to God. Let's rejoice in knowing that He hears each prayer. —Dave Branon

God hears us when we call to Him,
He does not miss one voice;
The knowledge that He always hears
Should cause us to rejoice. —Sper

You'll never get a busy signal on the prayer line to heaven.
