Get series about HEALTHY, and LOW CARB FOOD
This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

Yes, please add me to your ping list. (you must have quite a list now.)Need to get back on the diet as soon as my son goes home from his month vacation. Ate way too much seafood, breaded of course. Really appreciate recipes giving grams of carbos in each serving.

Hi there carlo! I have a question for you!
Wonder if you have any tips for me on doing chocolate covered strawberries. Rather than using a hardening chocolate and dipping them ahead of time, I would like to be able to have the bowl of strawberries and dip them right before eating them! - I think it is more romantic that way.
Would regular hershey's syrup like I would buy for ice cream be OK for this (warmed up a bit) or is there something better?

Cauliflower is so often overlooked, but so versatile as a substitution, or an accompaniment to a hearty, flavorful dish. It is an excellent replacement for potatoes, or even noodles on a plate.
Alone, it is all but flavorless when steamed or boiled, but sub a chicken, beef, or veggie broth in place of the water, and it will come alive. It really acts as a sponge, literally and figuratively, by adapting to the meal, and couldn't be easier to prepare.

Here's a better noodle replacement...
Onions Parmesan
8 medium onions -- sliced
1/4 cup butter
1/2 cup grated Parmesan Cheese
Saute onions in butter 10 to 12 minutes. Remove to baking dish. Sprinkle cheese over top. Broil 5 inches from heat until cheese melts.
This recipe yields 6 servings; 13.5 carb grams per serving.

Go down to your local Dairy Queen and ask if you can purchase about 10 ozs. of their chocolate cone dip (they may even sell you a whole can...depends on the store owner). Heat it in a double boiler until it's liquid. Keep it at about 120º F. Perfect!!

You're welcome! Make sure to specify you want it straight from the can, not already heated. Might cost you about .30 an ounce. They may not sell it to you, but it's worth a try.

HOT CHOCOLATE TIA MARIA FONDUE
Everybody goes off the reservation sometime... and when it's your turn.. what a way to go... sigh
- 8 oz plain chocolate
- 3 tsp instant coffee powder
- 5 fl oz / 2/3 cup double cream
- 3 tbs. Tia Maria
- selection of fresh fruit, to serve
1) Break up chocolate into a fondue pot.
2) Add the coffee and cream and heat gently, stirring all the time, until the chocolate melts.
3) Stir in the Tia Maria, and beat until smooth.
Sever with fruit, yes, like huge romantic strawberries, and cake.
There are any number of beverages to enjoy with this baby, Sauterne, Bristol Cream Sherry, or White Zinfandel and if it is really special.. Champagne, or Bernkasteler Doctor

Cauliflower is good but my favorite brassica is kale after a frost. Simmered with some garlic, onion, tofu, salt, pepper with olive oil drizzled over it when served.
brassica= members of the cabbage family such as kale turnip and greens mustard greens collard greens broccoli rabe bok choy Chinese cabbage kohlrabi rutabaga

You little devil, how could I refuse when you put it that way...~winks~ That was how I intended to hook ya!
Thank you carlo.... Your idea definately sounds like the most bestest high falutin way to do it, and I am gonna save that recipe for definate trying! I have a guy who really likes the sound of this idea, and will be definately worth the Tia Maria!
I have a lot of other things to get together for this occasion also, so I am gonna try the DQ method as the easy way out ~this time~.... But I knew I could count on you!
