Cauliflower is so often overlooked, but so versatile as a substitution, or an accompaniment to a hearty, flavorful dish. It is an excellent replacement for potatoes, or even noodles on a plate.
Alone, it is all but flavorless when steamed or boiled, but sub a chicken, beef, or veggie broth in place of the water, and it will come alive. It really acts as a sponge, literally and figuratively, by adapting to the meal, and couldn't be easier to prepare.
