RECIPES FOR CHRISTMAS

Holiday Ham with Fruit and Root Beer Glazed
BOILING AND SYRUP INGREDIENTS:
- 6 12oz bottles root beer (high quality)
- 1 red apple, sliced
- 1 green apple, sliced
- 1 cup red seedless grapes
- 1/2 orange, sliced
- 1/2 tsp cloves
- cracked black pepper to taste
- 1 tsp file (ground sassafras)
BOILING HAM:
1) Place ham in a heavy-bottomed black iron pot or dutch oven.
2) Surround the ham with apples, grapes, orange and cloves. Add root beer and dust with cracked black pepper and file. 3) Bring to a rolling boil and reduce to simmer. Boil approximately 1 hour and turn ham over and continue boiling until root beer is reduced to a thick syrup.
4) Remove ham and set aside. Continue to reduce syrup until it is the consistency of molasses.
CAUTION: Do not burn, or scorch. Remove syrup and place in a mixing bowl, allow to cool and reserve for later. INGREDIENTS:
- 1 (5 - 10 pounds) smoked ham
- 1/2 cup root beer syrup (reserved)
- 1 cup Creole mustard
- 1/2 cup brown sugar
- 1/4 cup pineapple juice
- 1/4 cup cracked black pepper
- pinch of cinnamon
- pinch of nutmeg
- pinch of allspice
- pinch of ground clove
Preheat oven to 350 degrees F.
1) Place in the mixing bowl, all of the above ingredients except the ham. Using a wire whisk, blend all spices into the mustard mixture until well incorporated.
2) Place ham in center of dutch oven and coat completely with the sweet mustard mixture.
3) *Bake uncovered for 1 hour.
*Preparing a decorated the ham for the table centerpiece. Start by uusing a sharp paring knife to cut slits on eighth inch deep diagonally across the ham. Continue in the same pattern from the opposite side until even triangles appear from the cuts. Stuff with cloves and, using toothpicks, secure pineapple slices or fresh strawberries to the top of the ham before baking.

Baked Shrimp
- 1 lb shrimp
- 1/4 cup parmesan cheese
- 1/8 cup of chopped parsley
- 1 cup bread crumbs
- 1-2 lemons
- Salt & pepper to taste
1) Clean and devein the shrimp.2) Coat a 13 x 9 pan with a cooking spray.3) Cut the backs of the shrimp, but do not go all the way through.4) In a separate bowl mix cheese, bread crumbs, parsley, and garlic.5) Dip the shrimp into the mixture. Place them into the pan.Bake at 400 degrees for approximately 12-15 minutes or until the shrimp is pink.Place the lemons cut into wedges for garnish.

Calamari Fritto
- 3 cups vegetable oil
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 12 squid, cleaned and sliced into rings
- 1 lemon, wedged, for garnish
1) Cut the head and tentacles off all of the calamari. Once the head is removed clean out the inside making sure to remove the quill. Scrape or peel the skin off the squid until you reach the white flesh. Cut into rings and rinse under the water.
2) In a medium size mixing bowl mix together flour, salt, oregano and black pepper.
3) Take each piece of calamari and dip it in the flour. Make sure to cover entirely in flour. Shake off the excess.
4) Place squid in oil for 2 to 3 minutes or until light brown. Beware of overcooking, squid will be tough if overcooked.
5) Dry squid on paper towels.
Serve with wedges of lemon.

Well, there will be no more talk about red drawers. The NYC transit workers have reached a tentative deal and there will not be a strike. So that means I will take my usual bus and not freeze my tusch.
It's such fun ...really.. living and working in the New York city area. Right now, the 11:00 news is on and people are dancing in the streets because there won't be a strike. Of course they are getting their pockets picked, but...they don't care... they're happy.
As for me, I'm just happy to resume my usual routine with my usual underwear.

Jelly, do you like anchovies?
Pasta With Anchovies
I know, I know...anchovies suck...LOL Just live a little..try it you'll like it!.. ;)
- Olive oil
- 3 cloves of garlic minced
- 1 can anchovies
- Pasta (1 pound)
- 3 tablespoons seasoned Italian bread crumbs
1) Over medium heat add only enough olive oil to coat your frying pan.
2) Add the 3 cloves of minced garlic. Once the cloves have been sauteed add a can of drained anchovies. Take a fork and smash your anchovies in the frying pan.
3) Add 3 tablespoons of seasoned Italian bread crumbs. Mix the contents together and cook till contents are warm.
4) Once the contents are heated add to 1 pound of drained pasta.
5) Mix thoroughly and serve with grated cheese.

THE EAR
An old man walked into a crowded doctor's office. As he approached the desk, the receptionist said, "Yes sir, may we help you?"
"There's something wrong with my penis," he replied.
The receptionist became aggravated and said, "You shouldn't come into a crowded office and say things like that."
"Why not? You asked me what was wrong and I told you," he said.
The receptionist replied, "You've obviously caused some embarrassment in this room full of people. What You should have said is there is something wrong with your ear or something and then discussed the problem further with the doctor in private."
The man walked out, waited several minutes and then reentered. The receptionist smiled smugly and asked, "Yes?" "There's something wrong with my ear," he stated. The receptionist nodded approvingly and smiled, knowing he had taken her advice. "And what is wrong with your ear, sir?"
"I can't pee out of it," the man replied.
