Pasta With Anchovies
I know, I know...anchovies suck...LOL Just live a little..try it you'll like it!.. ;)
- Olive oil
- 3 cloves of garlic minced
- 1 can anchovies
- Pasta (1 pound)
- 3 tablespoons seasoned Italian bread crumbs
1) Over medium heat add only enough olive oil to coat your frying pan.
2) Add the 3 cloves of minced garlic. Once the cloves have been sauteed add a can of drained anchovies. Take a fork and smash your anchovies in the frying pan.
3) Add 3 tablespoons of seasoned Italian bread crumbs. Mix the contents together and cook till contents are warm.
4) Once the contents are heated add to 1 pound of drained pasta.
5) Mix thoroughly and serve with grated cheese.
Baked Smelts
Pesce a la Padella 2 pounds of smelts (these are a small oily fish, that stay tasty and moist when you fry or bake)
2 cups bread crumbs
1 teaspoon salt
1/8 cup vinegar
1 cup mint leaves
1 can tomato sauce
3 tablespoons oil
2 cloves garlic (or 1/2 teaspoon minced garlic)
1) Debone smelts.
2) In a 13 x 9 pan you will layer these ingredients in the following order. 1 tablespoon oil, 1 pound of smelts, 1 cup of bread crumbs, a handful of mint leaves, 1/2 teaspoon of salt, 1/16 cup of vinegar, and 1/2 can of tomato sauce. Repeat the process so you have a second layer of oil, smelts, bread crumbs, mint leaves, salt, vinegar, and tomato sauce.
3) Spread the last tablespoon of oil. Place pan in a preheated oven at 350 degrees for approximately 30 minutes.
The smelts will be done when the top reaches a golden brown.
