Get series about HEALTHY, and LOW CARB FOOD

This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular.

With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef  (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

Assuming neither weight or diabetes is an issue, is there a reason I should watch my carbs?

Probably not. Just keep doing what you're doing. All of us are different. I was obese for years and tried the conventional "low-fat" diets which never worked for me (even with exercise). Eventually, I just accepted the fact that I was "meant" to be heavy.

But as I got older, I hated it. I hated the way my gut always hung over my belt. I hated having to go to the "Big & Tall" shop and pay double price for my clothing. I especially hated not being able to keep up with the kids and getting tired out all the time. Getting winded just climbing stairs.

When I started seeing the low carb threads here about a year ago, I was very skeptical. In my mind, it was just another "fad" diet that didn't work. But after seeing so many success stories from Freepers, I decided to give it a try in early April after coming back from a business trip and learning that I now weighed 300 pounds.

Well I am now down to under 225 and I've gone from a size 50 waist to a size 38 waist. I'm not stopping yet!

American Cheese Chips
Preheat oven at 350
Break a slice of cheese into quarters and place on a cookie sheet with a piece of the new non-stick Reynold's wrap. When the cookie sheet is full place on the highest rack in the oven and bake for about 8 minutes. Watch them closely until you figure out how long your oven takes to make them golden brown around the edges. Remove from the oven and peel them off of the foil. This works with several kinds of cheese. If your cheese is shredded just put little piles on the foil. The drier the cheese the crisper the chips. If you don't have the new nonstick foil just spray cookie sheet or foil with a cooking spray.

I buy the frozen unsweetened whole strawberries and they're not too expensive. I include a few of them and some blueberries in my sugar free jello. The frozen unsweetened raspberries are also reasonable compared to fresh and good in jello. Of course, not as good tasting as fresh, but easy to keep on hand because they don't spoil.

My sister makes her regular lasagna recipe and subs sliced squash for the noodles.

I make spaghetti with spaghetti squash instead of pasta. Spaghetti squash is mild tasting and comes apart in strands. Be sure to drain it well, though or it waters down the sauce a lot.

Re: buying lo-carb items. Check out Sam's Club. They have a good selection of high protein bars (CarbSolutions and Atkins) and treats like Atkin's Indulge bars. They also carry Atkins milk shakes. They are packaged in boxes of 10-20, if I recall and the price per item was significantly cheaper than what I saw in the Eckerd's drug store. The items are with the medicines and toiletries in Sam's Club.

I'm not ready yet for those kinds of treats, but when I get close to my goal, I'm going to buy them there.

That recipe makes about a quart and a half or 3 pints, so I scalded some canning jars and filled them and they sealed just fine and I put 2 pints in the pantry. With that much acid even a novice should be able to can it with no problems, but it is keeping real well. I have been using it mainly for cocktail sauce becuse Krogers has been selling their frozen shrimp unusually cheap, so I have loads of it in my freezer. You can also make a pretty good Barbeque Sauce by adding to the Splenda Ketchup recipe above 3 T. vinegar, 1 T. Worcestershire sauce, 1 t. onion salt, 1/8 t. Hickory Liquid Smoke and 4 drops Tabasco.

Thanks for the ketchup recipe. I have shrimp (bought at Kroger as well) but I can't stand it without cocktailsauce! Now I have something I can make so that I can eat the shrimp! Thanks again!

This sounds yummy!!!

Something else relative new in our grocery stores is Mt. Olive sweet gherkins (pickles) sweetened with Splenda. Two or three of these is a great fix when you crave something sweet with no carbs.

Get a pound of bacon, cut bacon strips in half, cross ways.

Wrap a single shrimp in a short slice of bacon. Secure it with a toothpick, toss on the grill. Grill until the bacon is crisp.

Up until now, I've served with Sweet and Sour Sauce. Once I get my Spenda, I'll try that Ketchup recipe and see how I can alter it.

I'm thinking of reducing Pear Juice and combining with the Splenda Ketchup.

WHAT ABOUT SNACKS...

you can just change your definition of snack..

It's all in your head, and thats where it belongs. We have this notion that something has to be naughty to be good! We perceive anything usually used in a different context and readily available to be blasé, or boring.

I have been skirting, and circling this issue in countless other venues, and here on FR for a long time.. Your mind craves satisfaction, something to change the subject and wake up the senses!

Your senses need a drastic change,. a jump start to wake them up, so they can tell the brain that something is happening to pay attention. You need, SPICE, BURN, FREEZE, CRUNCH, GOOEY, STICKY, SOUR, and yes SWEET!

Dips that are piping HOT as H%LL, frozen, and BITTER lime juice, cheap low carb baked wheat thins, with Habañero, or Jalapeño cheese dip, ..slowly eating only a few of these thingys will satisfy your hunger because they get the glands, and taste buds jumping. Use your imagination.. Strips of cold roast in one of those dips with burn you mouth for a moment and cause you to drink a gallon of ice water.. GOOD!  That'll fill you up! A touch of lemon on the tip of you tongue will pucker you up as well! Get the picture??

Lets see if you can post some of your own ideas!.. waiting.. tapping my fingers... looking at my watch.... whistling..... ZZZZzzz

Carlo, as a retired "chefess", I have really enjoyed your recipes over the past year or so. I still teach some cooking classes, but mostly cater for friends and family.
As for the "lo-fat" versus "lo-carb" feud, I believe a healthy balance is the best way to go. Now, really, how bad can an orange be for you? And a grilled beef tenderloin has to be better for you than a fat laden rib-eye. I've recently been brining poultry and pork before cooking. Adds alot of flavor and helps retain moisture.

That said, please add me to your voluminous "ping"list.

Two of my favorite snacks:

Antyime snack: Take 1/2 cup 1% fat cottage cheese, and stir in 2 teaspoons Swiss Miss Sugar Free Hot Cocoa mix.

Bed-time snack, or breakfast: A serving of FiberOne cereal with a carton of fat free, sugar free yogurt stirred in.
