What are you grilling/BBQ'ing for the Fourth of July / Independence Day celebration.
Share recipes, plans for the weekend, etc here.
Did you see the pic of the 600+ lb catfish? We need a bigger grill..
Kosher hot dogs, sirloin burgers, marinated boneless chicken breast and some steaks if I can find some good 'uns, otherwise some salmon.
I'm coming over. I will be ther in about an hour. WHat kind of beer should I bring? :)
Oops, make that west of Bettles

Good luck! My kids want to come up & visit in late winter (iditarod!)
The race officially starts in Willow, just north of Anchorage. The ceremonial start is in downtown Anchorage. My wife, sister and sister in law came up this year and they had a blast (I couldn't join them unfortunately). If they want to see the real start, they will have to rent a car.
I do believe the 2006 Iditarod comes through Galena (they take the northern route) so I can watch them go past. Any fire damage at that time will be under 6 feet of snow. :0)
We had our big fire scare (as did many towns in Alaska) last summer, most of the fires this year are well north of here.
Yes, but P I G pork comes in goodly sized slabs to smoke and be enjoyed by all. My neighbor, the retired USAF jet jockey, buys little (120 pound or so) pigs on the 4th, and roasts them over an open pit of charcoal (not store bought out of the bag, mind you) on a rotisserie made of 2" galvanized pipe. It's a sight to behold... he's got some motorcycle gears and a 1/2 horse electric motor that turn the thing... oh man, the smoke the thing puts off is enough to attract the hungriest of firefighters.... he feeds his children and grandchildren and the neighbors with it. It's a very cool tradition.
Rolling Rock
Exactly. It keeps the inside of the chicken moist as it grills. It'll be the most tender and moist chicken you can believe. The beer doesn't really add so much to the chicken. You could use water. On the other hand, if you were to put some wine with thyme and rosemary in the can, you'd get the solvent aspects of the wine allowing the aromatic aspects of the herbs to vaporize with the liquid to give the chicken some nice spice along with that moistness. Just a thought. Cook it on medium heat with a lid... you can't go wrong.
Cool, I'll give it a shot next time I BBQ (unfortunately not until Labor Day)
Using this method, you can cook any meat or vegetables you cook inside, outside- but with better flavor. Remember the mesquite, hickory, or apple chips, but a little goes a long way.
LOL. I take it you tried once. Yuck.
My beloved Sheltie died two years ago. He was the most laid-back dog in the world, and he LOVED fireworks. He'd sit outside with me on the 4th and on New Years Eve-when my neighborhood was so thick with smoke you could hardly see! Even when I lit fireworks, he didn't flinch-maybe he loved the smell of gunpowder, like his mom!
My younger Sheltie-also gone now- was like your dogs. HEARING a firecracker a mile away set him off. He didn't stop till they did.
Good memories, but sad too.
For our country's birthday I'm making a birthday cake( of course!) barbecuing andouille and chicken. Also making Natitoches meat pies and KFC's coleslaw and slicing a pile of Creole tomatoes. Maybe some fig ice cream.
Rounded off with fudge and daiquiris, it should be a good day- especially inside in the air conditioning!
Down here in Fairbanks we had a good rain a couple weeks ago, but that might not do in the long run. It is nowhere near as dry as it was last year, but it is certainly warm enough and dry enough to burn good.
My little cocker mix was like yours, she seemed to enjoy watching them, and they didn't upset her. My labrador was just ambivalent, he didn't care. Those two dogs are gone now, and my current two are a real pain in this regard!
Happy fourth to you.
How low can the heat go on a Weber?
I've got the Big Green Egg, and we can get it as low as 150.
Here it is.....
No. Just a little joke.
Do you give these tricks to Emril or do you get them from him?
