Processed meats including ham, bacon, pepperoni are now definitively linked to cancer (Group 1), and newer 2025–2026 studies reinforce thee is no “safe” level that exists for regular consumption

That color is then artificially enforced with a corrosive rust inhibitor called sodium nitrite. Group 1 carcinogen that ranks on the same pedestal as a cigarette. Many processed meats use mechanically separated meat or binders like hydrocolloids (e.g., carrageenan, xanthan gum) for texture, and ammonia treatments occur in some poultry/beef processing (to kill bacteria), it’s not universally in ham/bacon/pepperoni (but it is used)
The study comes from the International Agency for Research on Cancer (IARC), part of the World Health Organization (WHO)
IARC evaluated extensive evidence and classified processed meat (including ham, bacon, pepperoni, hot dogs, sausages, etc.) as Group 1—“carcinogenic to humans.” This is the highest level, based on sufficient evidence that it causes colorectal cancer in humans (with some links to stomach cancer).

Propaganda.
We have pasture land, so the steer is 3/4 grass fed. In fact, he’s back on grass today already! He goes to ‘The Spa’ in April. He’s about 1,300 pounds right now - we’re shooting for 1,500 finished weight, so he’ll get grain mix and hay along with what he grazes.
When all is said and done, it usually runs us about $3.50/# for all cuts. Even at $5.00/# it would be a bargain!
The hog was a little more pricey, but he doesn’t use the processor that we use. ;)

Whole slabs of bacon with zero nitrates or chemicals. I have a Hobart Deli Meats slicer. I slice what we need and return the rest to hang in the basement. Oh my is it fantastic!
You can buy “uncured”/no nitrate versions of those meat products mentioned.
Sounds good. Those Hobarts aren’t cheap.

Oh I agree with that as far as dietary restrictions go. But as far as I can tell, the Western world is not currently being invaded by hordes of Jewish people with a view towards imposing their laws, dietary and otherwise, on the rest of us. :-)

I have eaten all of that for over 75 years, continuously. I now will be on the lookout for any cancer. Have had none ever.
