New UC Riverside research shows soybean oil not only leads to obesity and diabetes, but could also affect neurological conditions like autism, Alzheimer’s disease, anxiety, and depression.
Specifically, the scientists found pronounced effects of the oil on the hypothalamus, where a number of critical processes take place.
“The hypothalamus regulates body weight via your metabolism, maintains body temperature, is critical for reproduction and physical growth as well as your response to stress,”
“The dogma is that saturated fat is bad and unsaturated fat is good. Soybean oil is a polyunsaturated fat, but the idea that it’s good for you is just not proven,” Sladek said.
Indeed, coconut oil, which contains saturated fats, produced very few changes in the hypothalamic genes.
“If there’s one message I want people to take away, it’s this: reduce consumption of soybean oil,” Deol said about the most recent study.

Sorry, forgot to include the immersion blender instructions.
You do it differently with just a bowl & mixer.
Immersion blender: Place all the ingredients into a jar and using the blending shaft run on Low until the mixture starts thickening.
Process for 5 more seconds using a gentle up and down motion until the desired consistency is reached.
You'll see that The Spruce Eats recipe in the link is a bit different:
Ingredients
- 2 large egg yolks, room temperature
- 3 teaspoons white wine vinegar, divided
- 1 teaspoon mustard [Dijon], room temperature
- 1/2 teaspoon kosher salt, or to taste
- 1 dash Tabasco sauce, or to taste
- 1 cup vegetable oil
- 2 teaspoons freshly squeezed lemon juice, room temperature

"Back in the day fast food joints cooked french fries in lard. Now they use vegetable oil. The ones made with lard tasted a helluva lot better, If I recall.
I agree, the fries tasted much better. I also cook with lard and will not touch any of the vegetable oils except olive oil. I also cook with bacon grease; strain it thru a fine-mesh stainless filter. Rendered fat was the staple food of arctic explorers and Inuit.

Hydrogenated oils are unable to be processed correctly by the body and end up as bad cholesterol. Never use hydrogenated lard.
My theory on why Hispanics are so obese now is because of hydrogenated lard and other cooking oils.

I buy lovely organic olive oil and my supermarket and beautiful butter from pasture-raised cows. A little more $, but worth it. Since I do not eat bread, I use very little butter, a little on potatoes and in pan cooking omelets. (Pasture-raised eggs too)
Nothing is more important than your health.

Here is the ingredient list for Kroger "Olive Oil" Mayonnaise: Ingredients Water, Soybean Oil, Olive Oil, Whole Eggs And Egg Yolks, Modified Potato Starch, Distilled Vinegar, Sugar, Salt, Lemon Juice Concentrate, Natural Flavor, Calcium Disodium Edta (to Protect Flavor).
It claims to be made with olive oil but it contains more soy oil than olive oil!

Same here, olive oil, coconut oil and butter. I have health issues that are exacerbated by most other oils: cottonseed, sunflower, canola, soybean, corn, etc. I eat minimal carbs, but I do enjoy Boulder Canyon Olive Oil chips.

Kraft olive oil mayo still has soybean oil in it, but further down the list. It does have more olive oil:
INGREDIENTS
water, olive oil, canola oil, soybean oil
Suppose it has 10 of olive oil, 9 of canola oil, and 9 of soybean oil.
Then it would have 18 of canola oil and soybean oil, and 10 of olive oil.

They make big money for the companies producing them, but maybe the rest of us should wise up and go back to the oils and fats people have been using for thousands of years without any problems. This is just anecdote-but I have observed two thing about the longest living people I have known.
1. They never jogged as exercise in their life.
2. They never worried about what they ate, or were ever on ant type of medical diet.
The so-called medical professionals would say , it must be because of their genes....Really??-Tom .
