NATIONAL BACON LOVERS DAY
August 20 is National Bacon Lovers Day on the National Day Calendar. Today we pay tribute to the crispy, chewy, and mouthwatering food we call bacon! If you're a fan of smoky, savory, and a bit salty flavor, this food holiday is for you!

The history of bacon is rich and long and dates as far back as 1500 B.C. Records show the Ancient Chinese enjoyed cured pork belly and other records indicate Romans used it in religious rituals to pay respect to the agricultural gods. However, it wasn't until the 16th century that the term "bacon" first popped up as any cut of pork. Over time, bacon became synonymous with cured pork belly and is what we are familiar with today.
In technical terms, bacon is a type of salt-cured pork with a distinct salty and savory flavor. It comes from the pork belly of a pig and is often high in fat. However, the fat content adds to the flavor and crisp texture of bacon during the cooking process. As a versatile food, bacon is used in breakfast, salads, sandwiches and desserts.
Scientists consider bacon as one of the most pleasing food scents.
The U.S. and Canada saw a surge in bacon consumption in the 2000s, prompting bacon to be included in recipes outside of breakfast.
Bacon is a versatile ingredient found in many dishes, often taking on a different flavor for both savory and sweet depending on the dish.
Civilians were encouraged to save their bacon grease and donate it to the military during WWII. The fat was apparently rendered and used as a key component to produce bombs and gunpowder.
Bacon has many alternatives, including turkey bacon and plant-based bacon, that are processed to resemble the taste and texture of traditional pork bacon.
Did you know? The phrase "bring home the bacon" originated in Great Dunmow, England, during the 12th century? It's true! Apparently a church offered a side of bacon to any married man who could refrain from arguing with his wife for an entire year. Those who could "bring home the bacon" were highly respected for their ability to not bicker with their wife...especially for an entire year!

Didn’t know it was bacon day, but I had some with a breakfast of eggs and baked potato hash seasoned with sage.
You can’t celebrate it in muslime UK
Fry 6 pieces of bacon in a cast iron skillet until crispy and reserve bacon grease.
Set bacon aside.
Saute’ one whole 1/4” sliced vidalia, Texas 1012, or walla walla onion in the reserved bacon grease until onion clears.
Remove onion from the skillet, draining the grease in the process.
Crumble bacon and toss with onion.
After eating go slap yo’ mama!!
LOL, never understood the appeal of it - people’s absolute obsession with everything bacon. Don’t get it, not at all.
And, I come from a bacon - loving family. Messy to cook - and way way way too salty...
It’s State Fair time in Iowa, where all the fair food is wrapped in bacon. Mmmmmm bacon.

National What?
It is my creation that consists of homemade breaded and fried (in olive oil) eggplant parm slices
and vegetable lasagna. Seasoned just so. Mix some garlic powder and
basil flakes and a dash of black pepper into the Progresso Italian Style bread crumbs
that I use to bread the eggplant slices. And the eggplant must be fresh -
preferably home grown in my vegetable patch. As are the fresh basil leaves
and fresh tomato cubes and the diced red bell peppers.
(The red onions I always buy.)
And since this culinary project is takes so much time/effort, jarred
Classico tomato and basil sauce may be used - but if I have some of
my own homemade sauce from a recent batch, I certainly use that.
And whole wheat lasagna noodles (overcooked so as to be soft enough),
lots of fresh pressed garlic, ricotta (I won’t again get into the argument over
the appropriateness of using small curd cottage cheese instead),
mozzarella AND some grated Monterey Jack cheese…
You get the idea.
Serve with a bottle of of Cabernet Sauvignon or Claret Red Bordeaux wine.
Homemade sourdough rolls to accompany all of this is optional of course.
Look at me - going into the spontaneous ‘food rant’, and it’s not even the weekend.
There is no reason for this ‘food madness’ now - I just finished a big enough breakfast.
Maybe I need to see a doctor, or psychiatrist, or maybe the ghost of Julia Child…

Yes, bacon can be added to the parmalagna, of course.
Iowa Fair is over, but don’t be depressed! Minnesota State Fair starts tomorrow and also has a cornucopia of bacon, such as Big Fat Bacon, 1/4-lb of maple-glazed bacon dusted with a blend of seven peppers and sea salt, or try Chicken-Fried Bacon Fries.
Uncured bacon and low sodium bacon are available. My favorite is Hickory Smoked bacon.........................
