You may be able to secure an exemption based on being a contractor as opposed to being an employee, and if you work remotely as opposed to in a company facility.

I don’t think this thing will last forever. I would try to wait it out. Try to work remote. Work on a religious exemption (I’ve heard that companies don’t really want to question those and it may just be you doing a little paperwork.
If you can string them along for 6 months that may be all you need. Tell them that you are working within the law to exercise your legal rights and you just need a little more time to get your ducks in a row with the paperwork. Stall. I would not quit. See how long it takes them to even fire you. In the very worst case scenario, get the jab in mid-2022 after at least a little more data on the effects of the shot really are.
