Western diet may increase risk of gut inflammation, infection

The study, in mice and people, showed that a diet high in sugar and fat causes damage to Paneth cells, immune cells in the gut that help keep inflammation in check. When Paneth cells aren't functioning properly, the gut immune system is excessively prone to inflammation, putting people at risk of inflammatory bowel disease and undermining effective control of disease-causing microbes.

In people, obesity is frequently the result of eating a diet rich in fat and sugar. So the scientists fed normal mice a diet in which 40% of the calories came from fat or sugar, similar to the typical Western diet. After two months on this chow, the mice had become obese and their Paneth cells looked decidedly abnormal.

"Obesity wasn't the problem per se," Liu said. "Eating too much of a healthy diet didn't affect the Paneth cells. It was the high-fat, high-sugar diet that was the problem."

The Paneth cells returned to normal when the mice were put back on a healthy mouse diet for four weeks. Whether people who habitually eat a Western diet can improve their gut immunity by changing their diet remains to be seen, Liu said.

"This was a short-term experiment, just eight weeks," Liu said. "In people, obesity doesn't occur overnight or even in eight weeks. We'd need to do more research before we can say whether this process is reversible in people."

Further experiments showed that a molecule known as deoxycholic acid, a secondary bile acid formed as a byproduct of the metabolism of gut bacteria, forms the link between a Western diet and Paneth cell dysfunction. The bile acid increases the activity of two immune molecules—farnesoid X receptor and type 1 interferon—that inhibit Paneth cell function.

The Standard American Diet (SAD) of high sugar with high fat sends our bodies into a crazed state, in time. Fortunately, aspects are reversible and it appears the bacterial colonies in our guts can shift to reduce inflammation. We know keto diets high in fat, but without appreciable carbs, do not appear to cause such dysfunction.

It would appear too much bile from a high fat diet interfacing with the poor bacterial colonies a high Glycemic Index/Load diet creates causes negative fallout from bile metabolites, so if considering supplementing with bile for a gallbladder-type issue, consider changing your diet first.

I’d want to know what kind of “fat” was applied in this experiment...natural fat, like from meat or butter, or vegetable and other refined seed oils that don’t exist in quantity in nature?

I’d bet that makes a difference.

• Research provides stronger evidence that the composition of gut bacteria influences obesity (Nature 2013;500:585).....fecal material from four human twin pairs (each set included one obese and one lean twin) was transplanted into genetically identical mice that were raised in a germ-free environment. The mice that received gut microbiota from obese humans became obese and developed obesity-related metabolism traits: dyslipidemia, insulin resistance, and inflammatory markers. In contrast, mice that received microbiota from lean humans stayed lean. Because mice routinely eat each other’s feces, researchers tried housing obese mice with lean mice — the obese mice gradually became lean and lost the obesity-related metabolic changes, and their gut flora changed to resemble that of the lean mice. The composition of gut bacteria involved just a few species.

The processed food industry in the United States does not want anyone talking about the difference in fats. Human beings have been eating animal fat since the beginning of history. We’ve only started eating things like margarine in the past century. The government even pushed margarine as healthier than butter during World War II when it was anything but. In addition, humans have not eaten massive amounts of sugar until about 150 years ago either. It was simply not available to ordinary people.

When I was in Israel...my gut and joints didn’t bother me the whole trip. Good food and kosher wine without sulfates.

I could eat all the burgers, chips, Twinkies and drink beer every day and not impact my health at all.

The difference being that nearly all of it would be made at home (beer, too. Nobody considers where the water originates in most beers).

Twinkies, too. I have a most excellent recipe.

Easier to eat probiotic foods, yogurt, kefir, kimchee, natto, sauerkraut, and others. No fecal transplant for me, no way!
