I am a bit of a grilled cheese purist. I like mine on white bread, slathered with butter (not mayo), and filled with gooey, processed American cheese. A good havarti is also acceptable if the mood dictates a touch of luxury, but harder, acidic cheeses like cheddar or parm are not allowed—unless you’re putting them on the outside of the sandwich.

Because of their low-ish pH, these cheeses tend to grease out and congeal, rather than melt into a soft, creamy blob (which is what you want in between your bread). But when placed on the outside of a sandwich, the fat inside the cheese renders, frying the proteins and leaving behind a lacy network of crispy, salty, fried cheese. I make Clam Chowder with Lactaid Whole Milk instead of cream for my wife and she reports no problems.

Yes, American cheese is cheese.
There are artificial cheese slices but there is also soy cheese and almond cheese and I don't know what vegan cheese.
Velveeta is not legally cheese because it has Milk Protein Concentrate in it. Yep, you read that correctly. If you add milk protein (which is made from MILK) to cheese (which is made from MILK) it is no longer cheese. The ways of the FDA are mysterious and sort of stupid. You want to read something that will make you want to cry go read the story about the farmer who took them to court to keep from being forced to label his straight from the cow milk with cream removed as artificial milk because it was not fortified. You will cry, you will laugh, you will wonder what kind of morons run the FDA.
But to return to your question yes, unless you buy the artificial stuff deliberately American cheese is cheese. Even the FDA says so but what do they know.
I know a lot of it that they sell is artificial.
Some kind of hydrogenated oil, cheese product with stabilizers.

Gubermint shut down a friend of mine for selling raw un pasteurized milk which he advertised as such
Sort of like the cheapest hamburger might be partly textured vegetable protein.
But there is still real hamburger and there is still real American Cheese.
One of the best grilled cheese sandwiches I’ve ever eaten was from a hole-in-the-wall eatery in Narita (Tokyo) airport.
I asked the chef what he did to make it so delicious, and the secret was spreading some cream cheese inside, along with the primary cheese.
Now cream cheese is mandatory in my grilled cheese sandwiches.
wow- I’m not that bad- that’;s pretty severe- must stink not beign able to eat and drink milk products-
I stay under their radar by selling only aged cheese not milk, not selling across state lines and keeping my cheese sales under $10,000 a year. Makes me a cottage industry.
I have occasionally wanted to expand but the flame is not worth the hassle.

Sad - I was almost going to ask if you are allowed to make cottage cheese, seeing as you can’t make milk.
I do have a pasteurizer and if I made fresh cheese from pasteurized milk I could sell it but it is not much better then the stuff in the store, it is more expensive to make, there is not much of a market and I would need to have even more government inspection and licensing.
So I make it for family only. And it is delicious.
I’ve made cottage cheese which is tasty, but not cheap.
Want to do a pan of lasagna with homemade sauce, pasta and ricotta, but get tired just thinking about all that work! Oy, getting old sucks! Hello, Pagliais? Delivery please!
The bowling alley made me these big grilled cheeses with rye and Swiss. Yum!
