Sad - I was almost going to ask if you are allowed to make cottage cheese, seeing as you can’t make milk.

Cottage cheese is fresh not aged cheese so no I can not sell it. I can not sell a cheese that has not been aged at least six months.

I do have a pasteurizer and if I made fresh cheese from pasteurized milk I could sell it but it is not much better then the stuff in the store, it is more expensive to make, there is not much of a market and I would need to have even more government inspection and licensing.

So I make it for family only. And it is delicious.
