I am a bit of a grilled cheese purist. I like mine on white bread, slathered with butter (not mayo), and filled with gooey, processed American cheese. A good havarti is also acceptable if the mood dictates a touch of luxury, but harder, acidic cheeses like cheddar or parm are not allowed—unless you’re putting them on the outside of the sandwich.

Because of their low-ish pH, these cheeses tend to grease out and congeal, rather than melt into a soft, creamy blob (which is what you want in between your bread). But when placed on the outside of a sandwich, the fat inside the cheese renders, frying the proteins and leaving behind a lacy network of crispy, salty, fried cheese. I will probably do this for lunch tomorrow for my bride and me.
She prepares breakfast and most dinners, and I do lunches.
I added precooked tomato and onion slices to the middle of my sandwich which has 3 slices of cheese. I suppose adding bacon bits would make my pallet go nuts.
I do two American and one swiss and consider this a protein bump.
Not bad for a chain. Five cheeses.
And yes, they do grill the thing with parmesan on the outside.

Definitely works in a pinch.
Once you go grilled pimento cheese with bacon,
you will never go back.
Mater soup is a must.
My only reservation is how will I dunk this in my tomater soup?
My personal preference is to use hands. Using your feet, well you could burn them or knock the bowl over, or get dreaded sweat sock taste.
i mix cheddar, swiss and mozzarella in our grilled cheese sandwiches.
I will try the crispy crust next time though.
Or American cheese on wonder bread fried in butter.
It is all grilled cheese to me.

Dad and I used to make grilled cheese and tomato soup on an old ben franklin stove in a shack where he worked when I was a kid.
Mayo on a grilled cheese?!? Gross.
I’ve used mayo as a sub for butter many times when in a pinch.
Even on corn on the cob.
I meant the soup wont soak into the toast cuz of the Frico.
And here come the Mayo haters ;)
I am rather surprised how many love American cheese.
Is it really even cheese?
I had an Aunt who used to make grilled cheese with Velveeta, I thought it was odd but never complained.
I found a really nice Mexican melting cheese called Menonita.
German Mennonite immigrants, taught the Mexicans how to make it.
And BTW people there is no such thing as orange cheese in Mexico.
