The picture above may look like a sickly amoeba; but it's fish, cooked in a very convenient and mess-free way: in parchment paper, or, en papillote
The very first time we tried this, it turned out perfectly. If you line your baking sheet with foil, there's little clean-up, and if you've never created a parchment packet, there will be a tutorial in Chef John's video below. This is an especially good way to cook fish as it always comes out very moist and tender.
But there are other ways to do 'food in packets', including Hobo Packs, a traditional Boy Scout specialty, which can be done in the oven, on the grill, or in the coals of a campfire. We tried a typical one the other night, and it came out very well, and just involves layering prepared stuffing mix, chicken, broccoli and Ranch dressing on a big foil square, and folding it up into a leak-proof packet (we tend to fold these 'burrito' style):

Ooh! An English pizza recipe! Yes, Delia is very good and I enjoy reading her recipes. I picked up a hard copy of BBC Food yesterday at Barnes & Noble because it had a 12 page spread of Nigella’s recipes. It’s a beautiful magazine.
Although people laugh, I still love Pizza Express.
I love the mango ice cream idea. Can you put together a recipe for that?
Yes, I like the clean-up; but it also cooks things nicely, especially fish and veggies. I would think that it retains more of the nutrition, too.

I’m an instinctive cook....little of this, little of that. I kick myself for not writing it down when something comes out really delicious.
The H/D mango sorbet is sauce-like .....once it melts. I added a dash of lemoncello b/c I had prepped my salmon w/ lemon slices.
But you could add Thai flavors to the melted mango sorbet....lime squeeze, grated ginger-root, dash of Sriracha for heat, a dribble of toasted sesame oil.
I find salmon is very forgiving-—it will marry w/ just about any flavor.
OK. So I take it there’s no need to thicken the sauce. Just add a few ingredients to the melted sorbet. Sounds easy and delicious.
Yup......it’s already a sauce right out of the carton....when melted.

I have never mastered the cornmeal trick. How do you knead dough on cornmeal without the cornmeal getting mixed in? And is there a special kind that doesn’t turn rock-hard when baked?
Actually, on that last point, maybe I should use coarse-ground flour corn . . .

One of the tastiest and refreshing things is a mango con chile popsicle,that you can get in hispanic markets.

I’ve seem the strawberry popsicles made on food shows....solid fruit frozen on a stick. Yum.
The cornmeal is used to avoid sticking.....using flour would absorb into the dough.....you do not want extra flour in your dough.
Some of the cornmeal might adhere.....that’s why it’s best to knead lightly.
That’s it,fruit and chilis.

My car broke down on the side of the road. I am waiting for AAA to tow me. it’s so hot I am pretending I am at a sauna. We make packets of squash, onions, & garlic w/ a pour of olive oil in foil packets. Works on the grill or in the oven.
The AAA guy wanted to know where I was headed. Does it really matter now???? Odd question.

As a speculation, I suspect it may be possible to substitute other grain flakes and ground nuts. We don’t have a lot of walnuts within easy reach, but pecan trees are plentiful!
I LOVE your idea of using an apple corer/slicer to deal with the onions! Gotta try that!
I love Delia’s recipes and have many of her cookbooks. She is a Christian/Anglican and has written at least three devotional guides, one for Advent, one for Lent, and iirc the other one is on prayer or being a Christian. Her devotionals are older, 1980s maybe, so will need to be found used.
