As a speculation, I suspect it may be possible to substitute other grain flakes and ground nuts. We don’t have a lot of walnuts within easy reach, but pecan trees are plentiful!
I LOVE your idea of using an apple corer/slicer to deal with the onions! Gotta try that!
I also use the apple corer/slicer to make thick julienne potatoes.
