I’m an instinctive cook....little of this, little of that. I kick myself for not writing it down when something comes out really delicious.

The H/D mango sorbet is sauce-like .....once it melts. I added a dash of lemoncello b/c I had prepped my salmon w/ lemon slices.

But you could add Thai flavors to the melted mango sorbet....lime squeeze, grated ginger-root, dash of Sriracha for heat, a dribble of toasted sesame oil.

I find salmon is very forgiving-—it will marry w/ just about any flavor.

OK. So I take it there’s no need to thicken the sauce. Just add a few ingredients to the melted sorbet. Sounds easy and delicious.

One of the tastiest and refreshing things is a mango con chile popsicle,that you can get in hispanic markets.
