No doubt it helps to know on this National Stress Awareness Day that a tax audit is probably three years off, occurring just before Statute of Limitations expires, and is less taxing than a nuclear bomb blast or cataclysmic volcanic eruption.

God Will Move The Stone

cover The women who sought to anoint the dead body of Jesus are to be commended for their tender love and regard for the Savior. Yet, as they came near the place of burial, the practical difficulty of moving the heavy stone that sealed His tomb brought them unnecessary anxiety. Their fears were groundless; it had already been moved.

So too, we are often needlessly concerned over prospective difficulties that God graciously removes or helps us overcome. Let us exercise greater faith in facing possible obstructions on the pathway of duty. We may be sure of the Lord's assistance in such matters when we press on in His name and for His glory.

The following poem gives us some practical admonitions that apply to today's reading:

In today's bright sunlight basking,
Leave tomorrow's cares alone-
Spoil not present joys by asking:
"Who shall roll away the stone?"
Oft, before we've faced the trial
We have come with joy to own,
Angels have from heaven descended
And have rolled away the stone. -Anon.

Go forward today on the pathway of service, undaunted by possible future obstacles. Let your heart be cheered by the certainty that whatever difficulty you may face, God will move the stone. -Henry Bosch

If God doesn't remove an obstacle, He'll help you find a way around it.

HAPPY EGG BENEDICT DAY!!

Eggs Benedict by Delia Smith (Britain top TV cook)


INGREDIENTS:

Serves 3 for brunch or 6 as a starter
1 quantity Hollandaise Sauce
6 large, very fresh eggs
12 slices pancetta, grilled until crisp
3 English muffins, split in half horizontally
a little butter

Can there be anybody who doesn't drool at the thought of Eggs Benedict? Soft, squidgy, lightly toasted muffins, really crisp bacon and perfectly poached eggs which, when the yolks burst, drift into a cloud of buttery hollandaise sauce. It's certainly one of the world's great recipes. Although originally it was meant to be served at breakfast or brunch (and still can be), it makes a great first course, particularly in winter.

Make the Hollandaise Sauce.

This great classic butter sauce from France can be tricky if it gets too much heat, so great care is in order here.

INGREDIENTS
Serves 4

2 large egg yolks
1 dessertspoon lemon juice
1 dessertspoon white wine vinegar
4 oz (110 g) butter
salt and freshly milled black pepper

Begin by placing the egg yolks in a small bowl and season them with a pinch of salt and pepper. Then place them in a food processor or blender and blend them thoroughly for about 1 minute. After that, heat the lemon juice and white wine vinegar in a small saucepan until the mixture starts to bubble and simmer. Switch the processor or blender on again and pour the hot liquid on to the egg yolks in a slow, steady stream. After that, switch the processor or blender off.

Now, using the same saucepan, melt the butter over a gentle heat, being very careful not to let it brown. When the butter is foaming, switch the processor or blender on once more and pour in the butter in a thin, slow, steady trickle; the slower you add it the better. (If it helps you to use a jug and not pour from the saucepan, warm a jug with boiling water, discard the boiling water and then pour the butter mixture into that first.) When all the butter has been incorporated, wipe around the sides of the processor bowl or blender with a spatula to incorporate all the sauce, then give the sauce one more quick burst and you should end up with a lovely, smooth, thick, buttery sauce.

Poach the eggs. When the pancetta is cooked, keep it on a warm plate while you lightly toast the split muffins on both sides. Now butter the muffins and place them on the baking tray, then top each half with two slices of pancetta. Put a poached egg on top of each muffin half and then spoon over the hollandaise, covering the egg (there should be a little over 1 tablespoon of sauce for each egg).

Now flash the Eggs Benedict under the grill for just 25-30 seconds, as close to the heat as possible, but don't take your eyes off them – they need to be tinged golden and no more. This should just glaze the surface of the hollandaise. Serve straight away on hot plates.

NOTE: Bacon can be substituted for pancetta but it must be back bacon and cured in the Canadian, British or Danish way.

A “left-handed” Happy Birthday Wish

Just because it’s your Birthday, you think the world should stop and cheer?
This same old world that’s gone around another year?
Well, I can tell you, we did fine before you came!
In fact, as I now think of it, that might just be the game!

You came along and now the world has gone to heck!
Don’t tell me you’ve not noticed that it really is a wreck!
Now I’m not saying you’re at fault for everything that’s wrong,
But it is coincidental that’s it’s been about that long....

Aw, don’t pay any mind to me. I really can’t blame you,
You couldn’t screw things up this way if’n you wanted to.
Why I remember that last time you blew the candles out,
You huffed and puffed and wheezed until your cousin had to shout!

“If we had another candle we would need some C O Two,
Or other fire extinguisher, to stand back-up for you!”
You laughed a little with that little smile you make,
But you’ll notice one more candle on this year’s birthday cake!

I’ve got the fire extinguisher and it’s all set up to go,
So let’s light up all these candles and put on a little show.
Just try to blow the candles out. Don’t let them burn too long.
That wax I ate last year convinced my stomach that was wrong.
