Afternoon Dog.. I'm glad you're working..because I am too. Made hot chicken sandwiches for lunch.. have a lemon cake in the oven, and have my chicken all cooked and shredded for chicken enchilladas for tonight.

Had a swim, and might just catch a little nap before making frosting and enchilladas later..

Oopps, there goes the oven... ;)

Ooooh Jeepers.

You are making me hungry, I bet you bake a mean lemon cake.

Last night was Chile rellenos at our house, my younger daughter has an aptitude for learning her mother's receipes, which are handed down 3d generation (at least) now. These are somewhat beyond restaurant fare. One kind is done with dark dried mulato peppers, softened, and filled with a sauteed hamburger / eggs / spices. The second is the more usual green Pasilla chili peppers stuffed with Mexican and Mozzarella cheeses. These are dipped in whipped egg white. The third treat is the combined whipped egg whites and sauteed burger fried into little silver dollar sized patties called tortas (or little turtles). these are all cooked up in a 12" deep skilled in a sauce of tomato, onion and garlic (light on the garlic). This is served with Mexican rice and refried beans and tortillas.

Ice cream (or as we had instead -- angel food cake, strawberries && whipped cream) is usually served afterwards.

My younger loves the tortas, and takes them out after they are cooked and before they go into the sauce and saves twenty or so for her school lunch. I came home hungry and snarfed half of them before realizing I was eating into her personal stash, but there were still plenty more in the pan. Probably will be dining on that again tonight, we left half of it in the pan.

I'll bet you do well with the chicken enchiladas too, that is another staple around our house.

Programming is funny business. It's a bit like music composition. You get your program running, it is like listening to music. Finally you hear the whole thing play. Then you take a walk and think how sorry the composer is, and come back with ideas for how you should have done it.

I loooove Mex. food..

I used to make my own tortillas before you could buy them locally.. That's how much I love Mex. food.. ;)

My dear.. if I could send you one I would.. It came out nice and high and looks delicious..

I used some of the fresh lemons from Deano's lemon tree. I froze the rest of the juice from them in ice cube trays for later using.. Those lemons are the size of a huge Navel orange.

I'm sure you can get some just as good at home..;)
