Is Recession Preparing a New Breed of Survivalist? [Survival Today - an On going Thread #2]
May 05th,2008

Yahoo ran an interesting article this morning indicating a rise in the number of survivalist communities cropping up around the country. I have been wondering myself how much of the recent energy crisis is causing people to do things like stockpile food and water, grow their own vegetables, etc. Could it be that there are many people out there stockpiling and their increased buying has caused food prices to increase? It’s an interesting theory, but I believe increased food prices have more to do with rising fuel prices as cost-to-market costs have increased and grocers are simply passing those increases along to the consumer. A recent stroll through the camping section of Wal-Mart did give me pause - what kinds of things are prudent to have on hand in the event of a worldwide shortage of food and/or fuel? Survivalist in Training

I’ve been interested in survival stories since I was a kid, which is funny considering I grew up in a city. Maybe that’s why the idea of living off the land appealed to me. My grandfather and I frequently took camping trips along the Blue Ridge Parkway and around the Smoky Mountains. Looking back, some of the best times we had were when we stayed at campgrounds without electricity hookups, because it forced us to use what we had to get by. My grandfather was well-prepared with a camp stove and lanterns (which ran off propane), and when the sun went to bed we usually did along with it. We played cards for entertainment, and in the absence of televisions, games, etc. we shared many great conversations. Survivalist in the Neighborhood

I remember when my mother would go to the First National Store in the fall and purchase a bushel of peaches. My Aunt had several pear trees and would give us a bushel. Then, along with some fresh pineapple, and canned cherries, we would have a day of canning fruit cocktail. What a mess when we were finished! Another nasty chore was the day we canned succotash. Sticky corn and shelled beans everywhere!

Just wondering-can you can goods that have been previously frozen? My family much prefers frozen foods, but if we had no power, I could thaw the food and can it on my wood stove. Would it be safe to eat?

>>>Just wondering-can you can goods that have been previously frozen?<<<

Absolutely!

Every summer I go through the freezer and clean house. Anything that should be rotated, gets canned. Nothing wasted and freezer doesn’t accumulate a bunch of old freezer burned stuff.

Rather than lose it if the power was off, I would certainly can it! (then it is good for years and years - without refrigeration)

Ever wonder how they make canned mixed vegetables? They usually freeze them and when the last of the mix reaches it’s season, they defrost the others, mix them and can them.
Of course they freeze them in 1,200# totes - slightly larger than our normal freezer packages. ;^)

I was curious about meats, but Jackie Clay back a couple of years ago posted:

“Good news, Susa. You can certainly can venison from the freezer. I’d just defrost it, partially precook it and can it up. Unlike the freezer, where you will experience freezer burn in about 8-12 months with venison, it will remain perfectly good nearly indefinitely once you have canned it up. This is, of course, when it is properly canned and stored in a dry, relatively cool and dark location. This also applies to venison that has been used in recipes such as spaghetti sauce, meatballs, stews or soups. Guess why I can nearly all my meat now?

—Jackie”

Probably should take the rest of my moose out and can it. It is over a year old now. We enjoy spaghetti sauce canned, so I could can some with meatballs in it. Depend so much on my two freezers that I have to think how to get along without them if we experience a power loss. Thank goodness for my wood cookstove. We have used it almost exclusively this winter and have gotten very used to moving pans to get the heat I desire. Will miss it when it gets too hot to have a wood fire. At this point, I wonder if that is going to happen this year. The electric stove seems to serve as a counter, only used when I need the oven at an exact heat for something fussy.

The Baltic Dry Index (BDI) is an indicator of how much product is actually out for delivery throughout the world. It cannot be cheated or manipulated because it deals with actual products that are either actively being shipped, or are on docks awaiting to be shipped as Freight On Board (FO . As the chart below proves, back in June, 2008 the BDI stood at a reasonably healthy 11,600. As of today, the BDI has plummeted to 791. That’s about a 94% drop in goods actually being shipped worldwide .

This portends unprecedented disaster around the world, especially as it relates to food. Products are simply not being shipped . They aren’t being shipped because there aren’t any orders for them. This will translate into massive, unprecedented unemployment worldwide and, as things get worse, massive food shortages .

Very scary. Thanks for posting this and for forewarning us.

The BDI is one of the purest leading indicators of economic activity. It measures the demand to move raw materials and precursors to production, as well as the supply of ships available to move this cargo. Consumer spending and other economic indicators are backward looking, meaning they examine what has already occurred. The BDI offers a real time glimpse at global raw material and infrastructure demand. Unlike stock and commodities markets, the Baltic Dry Index is totally devoid of speculative players. The trading is limited only to the member companies, and the only relevant parties securing contracts are those who have actual cargo to move and those who have the ships to move it

Googled this on http://www.wikinvest.com/stock/Baltic_Dry_Index_-_BDI_(BALDRY). Fascinating reading. I can't believe I've never hard to the BDI before - you'd think it would be in all the economic sections of the papers or primers on the economy. Thanks so much for informing us. (me)

>>>Will miss it when it gets too hot to have a wood fire. <<<

Fortunately up where you are, that should only be about 7-8 weeks isn’t it? I know in New Hampshire, even on most summer days, the evenings and mornings were pretty chilly.

I love a wood stove breakfast! Just seems to really start the day with everything right with the world.

Oh, speaking of stoves, I bought another Butterfly Kerosene stove this week. I wanted a bigger one for when I am canning out in the porch. Got the 22 wick 14,000 BTU model. Tried it and it really works great. Used it as a trial run for scalding the next batch of chickens I have to do. It heated the pot quickly on high and maintained the 150º temperature with ease - on the low setting, even outside with a strong breeze blowing and the temperature about 50º outside..

I was really impressed with the service from St. Paul Mercantile. Ordered it on Monday and UPS brought it Tuesday (with standard delivery). I figure that since I have 2 55gal. drums of kerosene, I have about 5 months at least for cooking plus additional heating if necessary.

Cilantro Herb

Cilantro is something which we use extensively for garnishing and for cooking and it has lot of medicinal values as is delicious as well.

Name Derived From
The name coriander derives from French coriandre through Latin coriandrum in turn from Greek
Known around the world
The leaves are variously referred to as coriander leaves in Britain; cilantro (from the Spanish name for the plant) in the United States, and dhania in the Indian subcontinent.

How does it taste?
The leaves, and especially the stems, have a very different taste from the seeds, similar to Parsley but “juicier” and with citrus-like overtones. Some people instead perceive an unpleasant “soapy” taste and/or a rank smell. This is believed to be a result of an enzyme that changes the way they taste coriander leaves, a genetic trait, but has yet to be fully researched.

Native
Coriander is native to southwestern Asia and west to north Africa. It is a soft, hairless plant growing to 50 cm [20 in.] tall.

Plant
The leaves are variable in shape, broadly lobed at the base of the plant, and slender and feathery higher on the flowering stems. The flowers are borne in small umbels, white or very pale pink, asymmetrical, and with the petals that point away from the centre of the umbel being longer (5-6 mm) than those pointing to the middle of the umbel (only 1-3 mm long). The fruit is a globular dry schizacarp 3-5 mm diameter. Another factor that dictates the quality of flavor is the time when coriander is harvested. If its roots consistently stay at a temperature above 75 degrees Fahrenheit, the herb will quickly bolt, causing its leaves and stems to yield a bitter flavor and become quite chewy. At this point, made evident by the thinner and finer leaves, it is practical to harvest only the coriander seeds, since the stems and leaves are no longer usable as food.

How it is used?
The name ‘coriander’ in a culinary context may refer to either the seeds of the plant (used as a spice), or to its leaves (used as a herb); however, in North American countries, for example, the name Cilantro is given to the leaves. The fresh leaves and stems are an essential ingredient in many Vietnamese foods, Asian chutneys, Mexican salsas and guacamole, and occasionally is used in sushi rolls. Chopped coriander leaves are also used as a garnish on cooked dishes such as dal and many curries.

Flavor
As heat diminishes their flavor quickly, coriander leaves are often used raw or added to the dish right before serving. In some Indian and Central Asian recipes, coriander leaves are used in huge amounts and cooked till they dissolve into sauce and their flavor mellows. Another factor that dictates the quality of flavor is the time when coriander is harvested. If its roots consistently stay at a temperature above 75 degrees Fahrenheit, the herb will quickly bolt, causing its leaves and stems to yield a bitter flavor and become quite chewy. To use the stems, separate cilantro leaves from stems. Chop stems finely and add them to your dish a minute or two before serving, just giving them time to warm up and disperse their flavor. The leaves will remain beautiful and fresh if you use them to garnish individual plates.

How it is stored?
The fresh coriander herb is best stored in the refrigerator in airtight containers, after chopping off the roots. The leaves do not keep well and should be eaten quickly, as they lose their aroma when dried or frozen.

Medicinal qualities
Coriander seeds are used in traditional Indian medicine as a diuretic by boiling equal amounts of coriander seeds and cumin seeds, then cooling and consuming the resulting liquid. Cilantro leaves aids digestion to some extent.

Breath Freshener
Cilantro leaves are great breath freshener’s after having our meal we could pop in some cilantro leaves for fresh breath of air. Even consuming it through food on our daily basis will help us avoid bad breathe.

Skin
When the juice of cilantro leaves is applied to the face it helps to even out the skin.It is very good for the discoloration of lips. It will remove the sometimes brown tinge of the lips due to excessive use of lip sticks and will help in getting the normal pinkish color. Apply the cilantro juice for 10 minutes every day for healthy looking lips.

Seed
The seed is powdered and is extensively used for making meat dishes in India, it adds to the flavor. The fruit of the coriander plant contains two seeds which, when dried, are the parts that are used as the dried spice. When ripe, the seeds are yellowish-brown in color with longitudinal ridges. They have a fragrant flavor that is reminiscent of both citrus peel and sage. Coriander seeds are available in whole or ground powder form.

Mint-The super Herb.

Mint descends from the Latin word mentha. In Central and South America, mint is known as hierbabuena (literally, “good herb”). In Lusophone countries, especially in Brazil, mint species are popularly known as “Hortela”. In the Hindi and Urdu languages it is called Pudeena.
Mint leaves, without a qualifier like peppermint or apple mint, generally refers to spearmint leaves.
The taxonomic family Lamiaceae is known as the mint family. It includes many other aromatic herbs, including most of the more common cooking herbs, including basil, rosemary, sage, oregano and catnip.
All mints prefer, and thrive, in cool, moist spots in partial shade. In general, mints tolerate a wide range of conditions, and can also be grown in full sun.
Mints are supposed to make good companion plants, repelling pest insects and attracting beneficial ones.
Harvesting of mint leaves can be done at anytime. Fresh mint leaves should be used immediately or stored up to a couple of days in plastic bags within a refrigerator. Optionally, mint can be frozen in ice cube trays. Dried mint leaves should be stored in an airtight container placed in a cool, dark, dry area.
The leaf, fresh or dried, is the culinary source of mint. Fresh mint is usually preferred over dried mint when storage of the mint is not a problem. The leaves have a pleasant warm, fresh, aromatic, sweet flavor with a cool aftertaste. Mint leaves are used in teas, beverages, jellies, syrups, candies, and ice creams.

The health benefits of mint include the following:
Mint essential oil and menthol are extensively used as flavorings in breath fresheners, drinks, antiseptic mouth rinses, toothpaste, chewing gum, desserts, and candies. The substances that give the mints their characteristic aromas and flavors are menthol. Menthol and mint essential oil are also much used in medicine as a component of many drugs, and are very popular in aromatherapy

Stomach Ache
Mint was originally used as a medicinal herb to treat stomach ache and chest pains. To cure stomach aches, put dried mint leaves in boiling water, then, when it cools drink it. This tea is called monstranzo. Mint tea is a strong diuretic.

Skin Care
A common use is as an anti pruritic, especially in insect bite treatments often along with camphor. And for pimples or acne it is very effective if you apply it as follows
1 teaspoon of curd
1teaspoon of mint paste (you can grind a few leaves in the mixer)
Few drops of lemon juice
Mix altogether and apply it for 20 minutes
Results- The final results are than you have a glowing skin with less impurities and after a regular application a clear skin it also helps to even out the skin.

Common Cold
Many people also believe the strong, sharp flavor and scent of Mint can be used as a mild decongestant for illnesses such as the common cold.

Digestion
Mint is well known for its ability to sooth the digestive tract and reduce the severity and length of stomach aches. In addition, mint teas and other herbal preparations have shown great promise at easing the discomfort associated with irritable bowel syndrome, and even at slowing the growth of many of the most harmful bacteria and fungi. The well-documented anti fungal properties of mint are thought to play a role in the treatment of asthma and many allergy conditions as well.

Anti Cancer
It is even thought that mint may have benefits as an anticancer food.
Enjoy this herb as it is very refreshing loaded with health benefits.

Buttermilk Reduces Gas and Flatulence!!

Buttermilk is lower in fat and calories than regular milk. It is high in potassium, vitamin B12 and calcium. Buttermilk is more easily digestible than whole milk and it also contains more lactic acid than skim milk. Due to being more easily digestible (a result of the bacteria added to the milk), protein and calcium can be taken up more easily by the body. There are 99 calories and 2.2 grams of fat in one cup of buttermilk (fat content may be different with some buttermilk brands), as opposed to whole milk that has 157 calories and 8.9 grams of fat.

Recipe of Buttermilk

3 tbsp of yogurt mixed in a 500ml of water. Whisk it thoroughly to avoid lumps.
The above is the plain buttermilk which in itself is great for the body. But to reduce gas and flatulence the below procedure is more effective

2 green Chilies slit,
½ tsp of Ginger grated,
¼ tsp of Asafetida

Mix the above ingredients in the buttermilk and let it sit for an hour. You can sieve the buttermilk now. This is also know as Masala Buttermilk or Spicy Buttermilk. Enjoy the flavored buttermilk. Garnish it with Cilantro leaves, Carom seeds and Curry leaves.

Goodness of this Drink

Asafetida is the main ingredient which helps to reduce the gas and flatulence. Buttermilk helps with the digestion due the enzymes in it. It’s a great body coolant. Instead of grabbing that soft drink go for buttermilk for better health and it quenches thirst.

Yogurt protects against Vaginal Infection

Yoghurt or yogurt, less commonly curd, yoghourt or yogourt is a dairy product produced by bacterial fermentation of milk.

How is it made?

It can be made by scalding milk, cooling it to just above body temperature, and then adding a small amount of previously made yoghurt (for example, store-bought, plain, live-culture yoghurt). The mixture is kept at the warm temperature for several hours, during which fermentation (proliferation of the bacteria that were in the previously made yogurt) causes it to become yoghurt

Do it for a week till your pH balance comes to normal.

Lactose-intolerant People can enjoy yoghurt without ill effects

Yoghurt has nutritional benefits beyond those of milk: people who are moderately lactose-intolerant can enjoy yoghurt without ill effects, because the lactose in the milk precursor is converted to lactic acid by the bacterial culture. The reduction of lactose bypasses the affected individuals’ need to process the milk sugar themselves.

Pump up your Fiber with Beans

“Bean” can be used as a near-synonym of “pulse”, an edible legume, though the term “pulses” is usually reserved for leguminous crops harvested for their dry grain and usually excludes crops mainly used for oil extraction (like soybeans and peanuts) or those used exclusively for sowing purposes (such as clover and alfalfa). In English usage, the word “beans” is also sometimes used to mean the seeds or pods of plants.

Beans are rich in Soluble fiber
In a small bowl of beans you will find about 10 to 12 gm of fiber. They are also rich in protein which makes them ideal for breakfast or lunch. It’s a great way to start the day with energy, this way you would be energetic and won’t feel lethargic during the day. This is also an easy way to increase your fiber intake.

How to cook
A recommended method is to boil the beans for at least ten minutes; undercooked beans may be more toxic than raw beans. Cooking beans in a slow cooker, because of the lower temperatures often used, may not destroy toxins even though the beans do not smell or taste ‘bad’ (though this should not be a problem if the food reaches boiling and stays there for some time). You can soak it for few hours to make the cooking quicker. while cooking you can add about 1/4 tsp of turmeric powder, it’s a great way to incorporate turmeric in our daily diet and it also eliminates any sort of unpleasant aroma if any of the beans.

Flatulence
Many edible beans, including broad beans and soybeans, contain oligosaccharides (particularly Raffinose and Stachyose), a type of sugar molecule also found in cabbage. An anti-oligosaccharide enzyme is necessary to properly digest these sugar molecules. As a normal human digestive tract does not contain any anti-oligosaccharide enzymes, consumed oligosaccharides are typically digested by bacteria in the large intestine. This digestion process produces flatulence-causing gases as a byproduct.

How to avoid Flatulence
Flatulence can be avoided by adding Asafetida (Hing). You can add about ¼ tsp of it for a bowl.

Regulates Bowel Movements
Due to the high amount of fiber in beans it helps to regulate bowel movements.

Aids Weight Loss
High amount of fiber aids weight loss as it makes us feel satiated. Thus we consume less calories throughout the day.

Great for Snacks and salads
Beans makes a healthy snacks and salads. They are easy to prepare and less time consuming too.

Buttermilk Reduces Gas and Flatulence!!

Buttermilk is lower in fat and calories than regular milk. It is high in potassium, vitamin B12 and calcium. Buttermilk is more easily digestible than whole milk and it also contains more lactic acid than skim milk. 6 Homemade Exfoliating Scrubs for Smooth Skin

Exfoliation involves the removal of the oldest dead skin cells on the skin’s outermost surface, and has been used for many years to help maintain the skin. Exfoliation is involved in the process of a facial and during body treatments at spas.

Exfoliation removes the outer layer to reveal the newer skin beneath. This shedding of the outer layer unclogs pores, keeps skin clean, and helps reduce acne breakouts. It is considered the first step in cleaning the face, followed by washing with a hypoallergenic soap, then moisturizing. Exfoliation is important for men as it exposes the hair follicles, allowing a better shave. It is possible to overly exfoliate, which dries and irritates the skin. The face is the part of the body most sensitive to exfoliation.

Take Note of : Be-careful while using oil based scrubs in showers as it makes the floor extremely slippery. Do a patch test behind your ears if your skin is sensitive. Be gentle while scrubbing as our aim is to remove the dead skin.
