Chocolate Mint Pie
Graham cracker crust in a 9-inch pie plate)
1 10-oz package or 2 cups fudge mint cookies, crushed
6 Tablespoons hot water
6-oz cream cheese
1/2 cup sugar
1 Tablespoon milk
1/2 teaspoon Peppermint Extract
1 8-oz container non-dairy whipped topping
1/2 teaspoon White Vanilla Extract
6 to 10 drops green food coloring
Mix crushed cookies and hot water; spoon into graham cracker crust and gently spread to cover bottom.
Beat cream cheese until smooth; gradually beat in sugar, milk and peppermint extract. Mix white vanilla extract into whipped topping and fold into cream cheese mixture until smooth. Stir in food coloring and spoon into crust, spreading evenly.
Refrigerate overnight. Garnish with fresh mint leaves, if desired, before serving.
Makes 10 servings.

Hi all. Hope everyone is enjoying their weekend.
Stopping by Woods on a Snowy Evening

Whose woods these are I think I know;
His house is in the village, though.
He will not see me stopping here
To watch his woods fill up with snow.
My little horse must think it queer
To stop without a farmhouse near
Between the woods and frozen lake
The darkest evening of the year.
He gives his harness bells a shake
To ask if there is some mistake.
The only other sound's the sweep
Of easy wind and downy flake.
The woods are lovely, dark and deep
But I have promises to keep
And miles to go before I sleep,
And miles to go before I sleep.

Oh yes, I love chocolate and cheese, too. One of my favorites is cheese cake. There was a time I ate it everyday when I was in college.

Just took a small walk up at Highpoint in NJ.
(Froze my ears off, but that's beside the point.. and merely a trifle. Ears are optional at extra cost.)

CHOCOLATE MINT
ON TEMPTATION

The divine aroma of chocolate mint is irresistible in this latest surprise from the plant world.

First man creates the chocolate after dinner mint. Now amazingly nature offers us a living flavour replica. Chocolate Mint combines the uplifting aroma of peppermint with the earthy irresistible aroma of chocolate.
CHOCOLATE MINT SAUCE
125gm dark chocolate
1/2 cup cream
1/2 cup milk
2 tablespoons brandy
1 tablespoon Chocolate Mint, finely chopped
honey
Simmer on low heat, milk, brandy, chocolate mint for 5 minutes.
Strain.
Combine chocolate, cream and strained milk in a double boiler over heat.
Sweeten to taste with honey.
HERB TEA
The fresh leaves make an uplifting tea.
GARNISH
Garnish desserts, cakes, cool drinks.
CULTIVATION
Spreading prostrate perennial. Roots may need containing.
BOTANIC NAME
Mentha piperita var.
