Growing up in NH one of my favorite smells is of a sugar house during the season. I used to go to my friends dairy farm that had a small sugar house. When sugar season came around in February and March we always ended up at the sugar house after running around the farm. After drinking cold maple sap from the galvanized buckets lining the large trees, we got hot syrup in pill cups straight out of the evaporators. Heaven!

The people who implemented this policy of hiring Mexicans instead of US citizens should be locked up. There is plenty of board feet to be cut here in Oregon. When after begging and pleading to allow some to be cut before it burns, illegal Mexicans reap the benefits. This is sick!
I stopped at a rest stop/park coming back from a fishing trip on Sunday on hwy 97 in Oregon, where it crosses the Crooked River. Signs posted every thirty feet demanded that dogs had to be left in the vehicle because a three hundred foot cliff on the gorge had killed many, many dogs over the years.
