Oops...looks like I was saying 4, 8 oz packages...lol..use 4 to 8 oz.

I usually have 4 oz with one can and the 8oz with 2 cans.

The leftovers are great for a quick snack and travel well for lunch.

KOSHER STYLE CHICKEN SOUP

I grew up on Chicago's near west side, in what was later referred to as a ghetto, with lots of old world Italians, and Jewish folks! The Butcher shops, were almost all Kosher, and the owners spoke Italian as much as we'd  kibitz in yiddish.

This is a recipe that I make almost every other week and use the rich broth for a mess of stuff.  I don't keep a Kosher kitchen, but I still frequent the Kosher bakery, and meat market and freeze the bagels and chicken until I need them.

This is Mrs Levy's recipe our upstairs neighbor, given to my great aunt at least 50 years ago and has been passed around ever since..

  • 1 kosher chicken 3-4 lbs cut into eighths, you can find at a kosher butcher, or some major supermarkets have kosher packaged chickens, they are always plumper and fresher, but a lot more expensive.. :(
  • 3 med. carrots cut into thirds
  • 1 whole medium onion, cut into quarters
  • 1/2 cup dry white wine
  • 2 stalks celery (optional, l don't always use it)
  • 1/2 bunch fresh dill (do NOT use dried dill weed)
1) Clean chicken, put into a dutch oven, cover with water up to 1/8th from the top of the pot. Add carrots, onion, and celery.  High heat until water begins to boil, then lower flame to simmer. Cook uncovered for 2 or more hours, add wine and fresh washed dill (including the stalks, I tie the stems together, or wrap them in cheese cloth), continue cooking for 20 minutes.
Take out dill and throw away.  Enjoy!
My youngest son makes the matzo balls following the easy directions on the box of matzo meal and serve them in the soup.
I also cook fine noodles and serve it with the soup as well.  Heaven on earth!!!

Can jicama be substituted for potatoes in potato salad?

I don't know.. LOL I've never used that stuff correctly so I am afraid to suggest it. It has a firmness and a texture that is compatable..
If you try it, or if someone else reading this know better..report back.. Good one Beanie, stumped the Chef,,you got me back for the wise crack on the last post you devil... Bwhahahaahahah.. :o)

Carlo, perhaps you have discussed this on another thread, but do you have any low-fat recipes for people with irritable bowel syndrome? Any suggestions would be VERY much appreciated!

Tuna dip.... Hickory flavored tuna. Yum
I hate mayo so instead of Miracle Whip (have a recipe for faux Miracle Whip using Splenda but haven't tried it yet).I use the cream cheese--actually like it better.

Yummm is right.. Try this bad boy.. you'll love it...

Homemade Mayonnaise

As easy as 1, 2, 3.. Bingo. it's fabulous!

  • 3 egg yolks
  • 2 Tbls. dry mustard
  • 1 tsp salt
  • 2 Tbls. sugar (substitute what you like for sweetener)
  • 1/3 c olive oil
  • 2 c salad oil (canola or corn)
  • 1/4 c white distilled vinegar
  • 1 Tbls. boiling water
1) Blend first four ingredients in food processor or with electric mixer at med-high speed, until very thick.
2) Add 1/4 c oil a very small stream at a time blending in very well between additions.
3) Turn to High, and beat in remaining oils alternating with the vinegar. Beat in boiling water. Refrigerate.
Yield about 3 cups. I keep it in a tight fitting mason jar in the fridge for about a week. I use it for everything.. Enjoy!

Hello, could you please add me to your ping list?

You wouldn't by chance have any recipes for lo-carb snacks? Stuff you could keep in the fridge to piece on? I sometimes get hungry for just a bite or two of something, but hate the trouble to cook something.

Thanks.

I did address this subject on another thread,  re: chronic constipation. But I elaborated a bit.. It's a problem that a lot of folks have when starting this type of diet. See if this answers your questions, if not ping me..

One of the really identifiable initial side effects for some folks on Atkins is chronic constipation. For others it is diarrhea, in the early days of Induction, as their bodies get rid of excess carbohydrates, and ketone production begins.  ..so go figure...

For many, it can take a week or more for the "first" bowel movement, after switching to low carb. This is especially prevalent if you were previously on a  diet that was full of highly processed and refined sugary starch carbs, the mere changing to eating more meats and low-starch vegetables will take a bit of adjustment. Once you do "go", things will return to a regular pattern.

However, constipation is also a symptom of low or sluggish thyroid. A few sure ways to tell if you have a low thyroid, is if you have a sensitivity to cold, hard to lose weight, combined with unusual hair loss. Although I have played a doctor on TV, you should ask a real one for the facts if you suspect this may be a cause.. LOL

One of the most notorious causes of sluggish bowels are pain-killers, especially codeine and other opiates, as well as antidepressants, iron pills and diuretics. Some calcium carbonate supplements can be constipating as well.

Are you eating a lot of homemade low carb desserts and treats, like cheesecakes, chocolates and artificially sweetened whipped cream things?? The artificial sweeteners that you buy to use at home contain maltodextrin, which helps give it bulk, and makes it look and and measure just like regular sugar. While the sweetener itself doesn't cause any problem, this dextrin (made from corn usually) can. So go easy, and do not create additional problems, including the overuse of laxatives. Laxatives are not an ideal solution, perhaps for occasional use only. Try a few of these suggestions first..

It is important to eat a variety of foods, including low carb high-fiber vegetables, leafy greens and salads, drink lots of water, and be sure to get regular exercise.

Are you consuming enough fats and oils? You do indeed need to ensure an adequate intake of fat ... olive and flax oil are good, add a Tbs. of either of these to the dressing you put on your salads. These will help prevent things from turning hard!

Add some variety to the vegetables you're eating. If the salads you eat are composed mainly of the pale iceberg lettuce, it's full of water, and not a lot else. Choose dark green lettuces, romaine, endive and raw spinach especially is amazing for it's ability to get things moving. Have a serving of lightly steamed, high fiber veg. such as broccoli, asparagus .... or spinach!

Cut out ALL salt for a couple days. So no ham, bacon, or bottled salad dressing, mayo, mustard, pickles or diet soda pop (soda = sodium). This will help get rid of fluid retention and bloat ... sometimes the abdominal bloat itself creates pressure which slows the bowel.

Try a cup of hot (but not boiling) water with the juice of half a lemon -- use fresh lemon juice, not the bottled type, which has sodium citrate in it. Drink this first thing in the morning, and again late afternoon, if no result. (The lemon juice does have a few carbs (2.5), but in this case, they're important)

Last but not at all least... if you eat a large piece of fresh Jalapeño, each and every day, you will hardly ever have a problem with constipation.. Strange but oh so true!!

Breastfeeding and preg... Obviously this is not a time to do anything like Induction, but adding a little fruit and nuts gives quite a complete diet, without all the bad stuff.

Re: your bruising.. Yes indeed, Almonds work.. Your info is so important, I hope folks copy your message and pass it down to those that are expecting or nursing.... I wouldn't be surprised if you don't get a few pings.. What a dear you are! Thanks so much.
