Eat less saturated fat: that has been the take-home message from the U.S. government for the past 30 years. But while Americans have dutifully reduced the percentage of daily calories from saturated fat since 1970, the obesity rate during that time has more than doubled, diabetes has tripled, and heart disease is still the countrys biggest killer. Now a spate of new research, including a meta-analysis of nearly two dozen studies, suggests a reason why: investigators may have picked the wrong culprit. Processed carbohydrates, which many Americans eat today in place of fat, may increase the risk of obesity, diabetes and heart disease more than fat doesa finding that has serious implications for new dietary guidelines expected this year.

...The analysis, overseen by Ronald M. Krauss, director of atherosclerosis research at the Childrens Hospital Oakland Research Institute, found no association between the amount of saturated fat consumed and the risk of heart disease.
The finding joins other conclusions of the past few years that run counter to the conventional wisdom that saturated fat is bad for the heart because it increases total cholesterol levels. That idea is based in large measure on extrapolations, which are not supported by the data, Krauss says.

...Although saturated fat boosts blood levels of bad LDL cholesterol, it also increases good HDL cholesterol. In 2008 Stampfer co-authored a study in the New England Journal of Medicine that followed 322 moderately obese individuals for two years as they adopted one of three diets: a low-fat, calorie-restricted diet based on American Heart Association guidelines; a Mediterranean, restricted-calorie diet rich in vegetables and low in red meat; and a low-carbohydrate, nonrestricted-calorie diet. Although the subjects on the low-carb diet ate the most saturated fat, they ended up with the healthiest ratio of HDL to LDL cholesterol and lost twice as much weight as their low-fat-eating counterparts.
Stampfers findings do not merely suggest that saturated fats are not so bad; they indicate that carbohydrates could be worse.

I cannot speak to research, as I don’t do that for a living, but I can speak to personal experience.
I wanted to drop weight several years ago. I read the atkins book and decided to give it a try for myself. I went to the doctor and had my blood cholesterol readings done. My total cholesterol was close to 300 and my triglycerides were 372. The doc wanted to put me on meds. I asked him to wait 8 weeks and let me try diet to correct. He recommended low fat high fiber. I told him I was going to do the atkins diet. He was adamantly against it. I followed the diet to the LETTER. And better yet, I decided I was going to eat the highest fat foods possible (eggs and sausage every morning for 8 weeks, ground beef for lunch, and fatty steaks, chops etc. for dinner), to really test the diet and put this to bed once and for all for myself. I always had either one salad a day (2-3 cups worth) with straight oil and vinegar for dressing, or at least a cup of green veggies.
When I returned to the doctor in 8 weeks, he looked at my blood panel and asked what med he had put me on. I told him none, I went on a diet. He said excellent work as all my numbers were NORMAL. (tryglycirides dropped almost 300 points in 8 weeks, hdl up, ldl way down, total chol. was 202. When he remembered it was atkins, he was blown away.
Next time I saw him, he dropped at least 50 lbs. When I commented how great he looked, he said it was thanks to me. He went on atkins and replicated my results for himself. He now puts all his patients on it. It does work, and it is not hard to do. One must understand that you can have pretty much a great lifestyle on atkins for weight maintenance. It is basically all carbs, but one must not have them every day, and you should not ever eat anything with refined sugar or frutcose anyway, its just bad for your body. That being said, when on the maintainence program, you can have it on occasion, you just save up your carbs for that day and apply them all to your special treat, or cut back the next day or two. Weigh yourself every week, and if you find you have gained 5 lbs , you immediately go back to phase one and lose it, don’t let it become 10 lbs. Other than that, pasta, bread, rice, potatoes can become a part of your diet, just no more than once or twice a week.

125 lbs. later, I can absolutely attest to the evils of refined carbohydrates! I was nearing 400 lbs. in college. I went back down to my “normal” weight of 330 after moving back home, but I was miserable. After an anxiety attack at work brought me to the brink, I endeavored to get back in shape.
I was at a plateau around 300 lbs, and a buddy of mine recently shed a lot of weight. His method: no carbs. I was still swilling beer and eating garbage thinking that the exercise would balance it out, but once I got rid of all of that and the rest of the carbohydrate crew, my weight plummeted! I shed 70 lbs. in a couple of months, and I’ve never looked back.
Although I eat fruits and certain starches, my weight is entirely manageable, and the nice thing now is that the tiniest amount of sugar makes me sick. Sugars and sugary byproducts light up the brain like a cocaine addict. Once we get past the withdrawal from sugar, fats and proteins taste so much better and are really great for you.
I’m trying to get my fiancee to see the light, but she’s convinced she can do it with sugars. I suppose only time will tell.

I lost 100 lbs by eliminating bad carbs. Good carbs have to be eaten at the right times. I do not eat any carbs after 7 pm. Carbs have to be burned off. Fats are good for you in moderation . Avocado olives etc. Even some cheese. I have kept it off for 6 years. Even fruits at night are a no no. The sugar has to be burned. It is all about timing. Period. The golden rule is Burn more than you take in. It is that simple.
