When it comes to storing food, many of us follow the practices our parents and grandparents used. Who cares about reading the package instructions when Grandma left her butter in the butter bell all day, every day, right?
So, maybe your butter's home is on the counter in a dish. Or if not on the counter at all times, perhaps you leave your butter sitting out overnight to soften before baking.
But, should you leave butter sitting out, unrefrigerated? And, if so, how long can it be on the counter before it becomes unsafe to eat? We asked the experts at Land O'Lakes to put the debate to rest once and for all—and some of you might not like the answer......
Even though room-temperature butter likely won't make you sick, Land O'Lakes recommends storing butter in the fridge when you're not using it. But, if you're in the heat of baking and forget to put the last little knob back in the fridge right away, that's ok—just so long as you don't let it sit out for a few extra hours.
"Do not leave butter at room temperature for more than 4 hours," says Engen. "Always return any unused butter to the refrigerator and be aware that butter left outside refrigeration may become darker in color and have [its] flavor affected."
Keeping butter in the fridge is a good rule of thumb, as it helps ensure the tasty fat won’t pick up any undesirable odors or flavors from your kitchen. Plus, the cool fridge temps make butter last much longer because room-temperature butter can go rancid within a day or two, according to the USDA, while refrigerated or frozen butter can last months.

I cook bacon in its own juices.
Just bought a rectangular bowl type butter keeper with a wood lid from Walmart. It’s wonderful. Holds more than one stick.
So, for years, you have been leaving sticks out for two days, covered.
That’s about right. It’s also more reasonable that leaving butter unrefrigerated for years. :)

Yes. I came to the conclusion years ago before any study that margarine is worse for you than butter, and I doesn’t taste nearly as good. Haven’t had margarine in my fridge for decades.
Life is too short for margarine or fake maple syrup!
My mother ALWAYS left butter out on the counter, but...like you, she went through it so quickly it didn’t make any difference...:)

Apparently she had cut a chunk of butter out of a frozen stick to let it warm up and the cat got a hold of it and ran off with it in her mouth, she had to chase it down!

Yeah all my cats are butter lickin’ bastages.
Sigh. Both of these cats I have now (they were brothers from the same litter we got at a shelter) have been totally fixated on food since we brought them home as kittens.
I have often wondered if they were deprived of food for some extended period of time and never got over it.
When we had cats in the past, we used to leave a large bowl of food out all the time, and they could eat as they pleased.
We had to buy an automated feeder that dispenses cat food four times a day, and when they hear the food drop into the metal bowls in our garage, they go from fast asleep to 120 MPH in a tenth of a second, and there is a frantic, high speed dash where they go through the cat-door flap into the garage, and eat as if they had been deprived of food for a week.
It was the one on the right that grabbed the chunk of butter.
