CHOCOLATE MACAROON DAY
June 3 is National Chocolate Macaroon Day on the National Day Calendar. Today, we are celebrating the tasty mix of chocolate in our macaroons!

Other ingredients include flour, sugar or sweetened condensed Macaroons are made from shredded coconut, usually sweetened and sometimes toasted, flour, sugar or sweetened condensed milk, and egg whites. Once the ingredients are combined, the mixture is dropped by spoonfuls onto baking sheets and baked. But, since today is Chocolate Macaroon Day, chocolate is added to the batter to make a sweet sensation even sweeter.
The macaroon originates from Italy and means means paste. When macaroons were first created it was common practice to make them with almond flour, which is much cheaper and easier to come by than coconut. Eventually, shredded coconut replaced the almond flour. Because they did not contain any flour, Jews in Italy ate them as treats during Passover. These cookies are now a traditional Passover treat in Jewish households throughout the world.
Macaroon seem more like a cake than a cookie. In fact, one of the very first mentions of the macaroon in America was in a cookbook called, “Mrs. Esther Levy’s Jewish Cookery Book” in 1871. The cookbook was the first Jewish cookbook published in America. The cookbook had no category for cookies, so the macaroon recipe was placed in the cake chapter.
In 1903, macaroons appeared in another cookbook under a recipe for “coconut kisses.” Around this time, coconut had become a symbol of success to Jewish immigrants from Eastern Europe. Just as macaroons were a Passover treat in Italy, they had become the same for Jews in America. Today, these cookies aren’t just a favorite for Jewish Americans, but all Americans. In fact, macaroons made one popular website’s top 16 list of “All-time Favorite Cookies.” Today, macaroons are enjoyed by people in many countries across the globe.

Love’m easy to make...but one little cookie is 100 calories..
When eggs started getting expensive our friends who usually keep up to 30 chickens started giving us fresh eggs.
The difference between store bought is stark to say the least.
I know right. My neighbor had hens. Fresh eggs are the best.
Yes, we have 4 free-range hens and they keep us supplied and we still give away dozens.
They are all brown eggs and the yolks are deep, deep orange, not that weak yellow of commercial eggs...............
Yep, orange yolks was the 1st thing we noticed.
The eggs we get from them are from several breeds so the eggs are different colors. Blue, green, brown, white.

Commercial white egg layers are typically White Leghorns, Bred for their egg laying quantities.
I check the price of eggs weekly on my Friday grocery run - they’re still running around $5.99/dozen for the house brand. Haven’t checked WalMart, may be lower there. Family loves eggs for breakfast but we’ve been taking a “break” lately b/c of the high price.
As for macaroons - I buy a chocolate dipped variety at Whole Foods that we have to split into four piece b/c it is so rich.
We have two Rhode Island Reds, one French Black Copper and one Amerucana..................

This famous Messianic verse tells it like it is:

A couple of relevant details, even if it looks like I'm just egging people on:
1. "as long as the sun" is lifnei shemesh [לִפְנֵי־שֶׁמֶשׁ], before/in the presence of -- lit. to the face of the Sun.
2. the verse has a little quirk in that its reading differs from the writing, adding to the way(s) it is translated --
"Be continued" was written as "ינין", but pronounced as a name, "Yinon" (יִנּוֹן). Even here, the word in the verse is written as Yinon (יִנּוֹן).
You can see the difference as noted/highlighted here.
It's the source verse for the tradition that one of the things created before the Creation of the World was the name of the Messiah. As such, the ALT translation is
"Before (on the face of) the Sun, Yinon is his name."

On a personal note, I'm really fond of the winking face emoji, because he reminds me of Leonhard Euler, who in turn is famous for his IDENTITY that's held up as the quintessential example of mathematical beauty.

Willie’s version of “Uncloudy Day” is one of my favorites. My grandfather’s favorite hymn.
Talk about a living parable:
Pickled Beets & eggs
3 cans sliced beets, drained
4 hard boiled, peeled eggs
1 thick sliced onion
1 tbsp pickling spice
1 heaping tsp sea salt
1 tsp sugar
1/2 tsp black pepper
1 bay leaf
Add ingredients to jar then pour over them, boiling a 50/50
mix of cider vinegar and water.
Seal and refrigerate. Pickling time is a minimum of two weeks. Egg whites turn a purple color, which can penetrate into the yolk.
Very different from tea eggs.
That deep orange is kind of creepy. And the yolks hold up better. Those eggs make sauces creamier.
Creepy? IT LOOKS DELICIOUS!....................
