Spunky, what does the mayo actually do to the roast? I’ve heard of coating boneless, skinless chicken breasts with mayo and parmesan cheese and then baking, but in that case I can understand the egg content of the mayo holding the cheese to the chicken and solidifying a bit.
That roast is so beautiful looking - does the mayo give it that glazed look? And it’s done just nicely pink....so good.

Well now, that’s odd. I wonder why so many Canadians do water color. Natalie dabbles in it a bit. Makes cards and small pics and such. Lots of flowers and birds.
