Hopefully the thread won’t stagnate and I’ll do better at posting weekly (or bi-weekly) topics than I have in the past. (anyone willing to post a topic now and then we'll be highly praised and appreciated).
We are in for some bumpy rides, and prepping can only help. If for peace of mind, if nothing else. We have a wonderful gardening thread and a current-events survival/prepping thread, and hopefully this one can piggyback off of those, maybe having a longer discussion about certain topics or … whatever. It's your thread, do what you like with it! (civilly, of course)

I have a pressure canner, which I rarely use...mostly doing waterbath...
anyone have any experience with those new digital pressure canners?

Excellent advice, Metmom. When we built our little retirement place in the mountains, we chose a place bordered by high ridges on 2 sides and a neighbors land on one side (which is also bordered by a ridge on the far side), only one way in off the main hwy for the 6 families that live along our dead-end road with the high ridges and dense forest surrounding. Then our drive off the dead-end road is almost a half mile of gravel through rough forest. At first we thought of having a nice wrought iron gate, but Mr. Pandowdy, in his wisdom chose an old tattered rusty farm gate.
I talked briefly from a guy from British Columbia...he was so disgusted with his country and his country....as I of my country and my so called govt....we’ve been had, hook, line and sinker and I hope we can “wiggle” off the hook someday.
remember....freeze dry goods for several days before you put them in storage..
I don’t know if it would be worth trying to can potato salad.
It’s so easy and quick to throw together...just a jar of the potatoes, cut-up hard boiled eggs, a sprinkle of frozen peas, and Heinz Sandwich Spread that has everything in it already. I get it online from a store that sells British groceries.
I live alone, so I canned the meat in jelly jars...lots and lots of jelly jars!

I don’t have a new pressure canner, but do a lot of pressure canning.
I do a lot of meat. When we have turkey, I cook down the carcass and make broth for soup and gravy.
I have pressure canned a lot of meat for soups and stews. I only do the meat and broth and add the veggies later so it’s much more like a fresh product. I don’t like pressure canned veggies.
And in light of the push to get us away from meat, pressure canning provides a supply of that that keeps far better than freezing. Although, doing a T=Bone is NOT going to work.
I like the old type canner with just the dancing weight on top. The gauges can get out of whack so easily. Don’t know about digital stuff. I’m able to use my canners on the little wood stove if something happens to the electricity.

People with gas are fortunate, every prepper should have backpacking stoves, which I do, including passive stoves that burn twigs, but for the home and convenience my countertop prepper stove is this one “Gas One GS-3400P Propane or Butane Stove Dual Fuel Stove Portable Camping Stove” they also have a 15,000 btu version.

For backup, people with natural gas or propane should also try to purchase the appropriate free-standing heater that doesn’t require electricity and practice connecting it somewhere, like a tee off of the furnace gas line or a tee off of the kitchen stove gas line, or off the water heater gas line, or gas dryer line, wherever the best room for the family to gather around the heater if you were without electricity and your furnace or pellet stove.

Here’s my dog food recipe. It’s stupid simple.
Boneless skinless chicken breast when it’s $1.99 or less a pound. I do about 8 or 10 pounds at a time.
Peeled and chopped carrots.
Cut up the chicken breasts into 1 inch cubes.
Put meat and some carrots into clean pint canning jars, all raw pack. Pack them full. Dash of salt goes in.
Clean the rim of the jars with a paper towel soaked in a bit of vinegar. This assures a clean tight seal.
Process in a pressure canner for 75 minutes. Let it cool before removing the jars.(but you know that.)
Remove from canner and wash before storing.
Leo loves it. Won’t touch the store bought stuff anymore.

Oh I wasn’t thinking of canning potato salad! I should have been more clear. I didn’t know if the dry canned potatoes could be used for it. If their consistency would have been soft enough.
