NATIONAL LIMA BEAN RESPECT DAY

National Lima Bean Respect Day on April 20th gives the humble lima bean its due. When cooked, fresh lima beans have a creamy texture. However, dried lima beans once cooked serve up a bad reputation due to their graininess. There are ways to achieve smooth, buttery lima beans using dried beans.

First, it’s important to sort the beans and discard any wrinkled or cracked beans. Place the beans in a large bowl and cover them with three times as much water as you have beans. If any beans float to the top, immediately discard those, too. Soak the remaining beans overnight.

The next day, drain and rinse the beans three times. You want your water to run clear. Place the beans in a heavy saucepan and cover with fresh water. Bring the water to a boil and let simmer for about 1 hour or until the beans are tender. You can add them to other recipes and enjoy.

Lima beans are an excellent source of protein, iron, magnesium, potassium, and zinc. They can also increase energy levels by helping to restore more iron. Most of us have tried lima beans as a child and didn’t like them. It’s time to give them a second chance as adults. They are delicious in soups, stews, salads, and casseroles, by themselves or mixed with other vegetables.

Thanks for the recipes. I'm going to try them. I love lima beans, but for some reason the frozen ones have been difficult to find in my area in the last couple of years. My mother used to put frozen lima beans in a pot with just enough water to cover them, bring them to a boil, and let them slow cook on the stove until they got soft and creamy. Delicious! I love to make them the same way.

Next time you make BBQ, take any leftover meat, doesn’t matter if it pork, beef, or chicken, and toss it in with some vegetables like corn, tomatoes, lima beans, and fried okra, add more bbq sauce and maybe some ketchup. Have a side of corn bread. Those are some good eats, and you can get a little bit of those lima beans in. Just make sure they aren’t undercooked.

It’s hard to find ANY frozem limas anymore, except for “baby” limas, and now the new “tiny” lima variety lol.

They have no danged flavor.

Which is why I’m planting three different limas this year. I hope I get big, bigger, and biggest.

My mother made creamed lima beans at Thanksgiving. That might get you back on board.

Find some BIG frozen limas, if possible. Cover with water, boil for 10-15 mins, drain. Add a cup of half and half, return to a boil, boil until liquid is reduced by about a third. Salt, pepper, and parmesan cheese to taste.
