My mother made creamed lima beans at Thanksgiving. That might get you back on board.
Find some BIG frozen limas, if possible. Cover with water, boil for 10-15 mins, drain. Add a cup of half and half, return to a boil, boil until liquid is reduced by about a third. Salt, pepper, and parmesan cheese to taste.
That sounds good - I just bought a roast for tomorrow’s dinner - we were just discussing what sides to have with it. Should be interesting!
