Epicurious to stop posting beef recipes, citing climate change

Food website Epicurious will no longer publish beef recipes, citing the impact of raising and consuming cattle on climate change.

Cutting out beef from one's diet is "a worthwhile first step" in cooking more sustainably, wrote Maggie Hoffman, senior editor at Epicurious and David Tamarkin, former digital director of Epicurious in a blog post Monday.

Livestock accounts for nearly 15% of worldwide greenhouse gas emissions — 41% of those emissions comes from beef, according to the Food and Agriculture Organization of the United Nations.

Fossil fuels produce the pesticides and fertilizers used to grow the corn and soybeans consumed by cattle. When cows feed, they release methane into the atmosphere, a major contributor to global warming. Also problematic is their manure, which releases nitrous oxide and methane in the atmosphere, Sujatha Bergen of the Natural Resources Defense Council told Epicurious.

"It might not feel like much, but cutting out just a single ingredient — beef — can have an outsize impact on making a person's cooking more environmentally friendly," the editors said.

Under its new policy, Epicurious will not mention beef in any new recipes, articles, newsletters or Instagram posts, according to the company; existing beef recipes will remain on its website.

Epicurious called the move "pro-planet" and said the "shift is solely about sustainability, about not giving airtime to one of the world's worst climate offenders." The company also acknowledged that nearly every recipe ingredient comes with environmental costs, but said none are as significant as those linked to beef.

We will still raise beef cattle..... and my wife’s cousins have a processing plant about 35 miles from here. Maybe the market will be right for me to start selling pre-packaged beef instead of on the hoof.

Luckily the recipe for grilled ribeye is very simple and so Epicurius can’t remove it from my brain: Sprinkle Pappy’s Seasoning on both sides, place on grill, cook 7-10 minutes per side depending on thickness, for medium rare.

My 18 year old high school senior would eat this every day if he could! Luckily I found a grocery store where it is only $9/pound (good for my area).

The insanity grows. Ok, eliminate gas engines, cattle farts, coal plants, natural gas plants, plastics, etc. Still, we have to cleanse the atmosphere completely of CO2 as Kerry pronounced at the recent Climate Summit.

Eliminate CO2 = Kill the plants - kill humanity. These people are brain dead.

Epicurious is an excellent website, but I suppose I won’t be using it for recipes anymore. That’s a shame. Next they will cancel chicken, and pork, and fish recipes...then anything using dairy...

Looks like cheese is next on the carbon footprint list after beef. Betcha they’re not gonna give up cheese though.

FWIW, lamb produces more carbon than beef on a per pound basis.

Here’s a recipe for beef.

Beef Barley Soup.

Cook beef chunks in water, pan sear first if desired.
Add parsley and a couple bay leaves.

Boil 60-90 minutes.

Take out beef and bay leaves. Add pearl barley and cook 45 minutes.
Pearl barley expands a lot so you won’t need as much as you think.

When barley is done, add meat back in, then add diced carrots, turnips, onions, and celery. Add more broth if needed, adjust seasonings, and cook until veggies are tender.

It goes great with fresh out of the oven Oatmeal Scones.

I never liked that website and I’ve bookmarked thousands of recipes from other sites. But if I had to pick only one website for recipes, it would be Ree Drummond’s, The Pioneer Woman. She makes the food I like to eat.

Good thing I already know how to grill a steak and throw down a beef wellington. I bought five pounds of ground beef to feed the effing this week too. climate change. Give me a break. More like global status change.
