100-Year-Old Pound Cake Recipe Becomes Source for Prosperity During Pandemic

'It’s really hard to believe. It’s a dream come true.'

April McClung needed to raise money for her son’s trip to China and Europe.

So, she turned to her grandmother’s 100-year-old pound cake recipe for inspiration.

"Just lifts your spirit, when you have really good food -- all natural, no preservatives -- butter pound cake and it’s just one of the best!" said April McClung, owner of Emily's Heirloom Pound Cakes.

That one recipe exceeded her expectations and raised $14,000 in nine months. It also gave her the courage to launch Emily's Heirloom Pound Cakes, named after her grandmother.

"So here we are now, over six years later, we are producing over 5,000 packaged slices a month, hundreds of cakes. We ship all over the country," said McClung.

Like so many other restaurant owners, COVID-19 forced McClung to reinvent her business. "So we pivoted and figured out how to get that website cranking! As a result of that, our website has tripled,"said McClung. She also partnered with food trucks. "Going to all these different neighborhoods, couple that with the farmer markets and BAM. It’s amazing,"

Her quick thinking allowed her family’s legacy to live on and is a testament to never giving up.

"It’s really hard to believe, it really is, it’s a dream come true," said McClung.

Your post . . . .just as I was thinking about having a snack!!!! I’m starting the coffee now . . .but there’s no pound cake here. I’ll have to bake some Schwan’s Monster Cookies.

100 year old pound cakes. I misread this thread. I thought that we were talking about fruit cakes, not pound cakes. I have one of those 100 year old fruit cakes in my pantry.

No, but you can have mine.

Piasa Pound Cake

3 Cups of sifted cake flour [sift first then measure out 3 cups]

3 Sticks of butter...let it warm up so it’s soft.

3 Cups of sugar or better yet brown sugar

6 big eggs, duck eggs if you have them

1/2 pint of heavy cream

1 tsp almond extract [or vanilla, or lemon, etc]

Preheat oven to 325 degrees F

Grease and flour a tube pan, set it aside

Cream butter and sugar together in mixing bowl, then add eggs one at a time, taking care to beat well after each one.

Then while mixing, add a little flour, then a little whipping cream, then flour and so on until flour and whipping cream are used up.

Stir in extract and pour into the pan.

Bake for an hour and 15 minutes.

It’s also good if you stir in orange or lemon zest, or black walnuts, etc.
