Those who love rib-eye steaks and double-cream Brie will feel better about their guilty pleasures after reading Nina Teicholzs article in this weekends Wall Street Journal, The Questionable Link Between Saturated Fat and Heart Disease. She writes, for example:
Too much whole-grain oatmeal for breakfast and whole-grain pasta for dinner, with fruit snacks in between, add up to a less healthy diet than one of eggs and bacon, followed by fish.
Gary Taubes covered some of the same ground in his excellent 2008 book, Good Calories, Bad Calories: Fats, Carbs, and the Controversial Science of Diet and Health. Taubes argued that that consumption of saturated fat does not cause obesity and heart disease; the culprit, instead, is refined carbohydrates like white flour and sugar.

My kids and grandkids know EXACTLY what I order when out for breakfast.
Two eggs,over easy.
Bacon,crispy.
Home fries with onion.
Buttered wheat toast.
Black coffee.
It never varies and I’ve been doing this for many years without harm.

My new gig isHomemade Pesto Sauce with Bacon instead of Pine-Nuts. Basil, EVOO, some lemon zest, Parm-Cheese, fresh garlic and chop bacon in the processor, yes you can add some big pieces. Non-Chinese Pine-Nuts not co-mingled with other nuts are getting impossible to find.

I've been saving my bacon grease lately...like my mother did.
Fried some deer meat in it last week. It gave it that nice fatty taste that deer meat lacks.

How does this explain the higher rates of heart disease in the southeastern United States?Maybe dredging everything with flour and deep frying it in Crisco has something to do with it. Add mashed potatoes with flour thickened gravy. Top it off with liberal helpings of biscuits, corn bread, or hush puppies. (Not to mention pecan pie and ice cream.)

Funny, we do too. All bacon grease poured into a metal can. Stored in the fridge. Great for frying eggs. But not too much, just a slight film in the skillet. Now, onto baked beans ..... yum.
