Currently taking a breather from that program.
*chuckle*

Got only light drizzle from what was left of charlie.
Yesterday was worse, we had hail, high winds, and lightning.. and it wasn't anything left over from charlie..

Boston Butt Pork Roast

3-4 pound Boston butt roast (or larger if desired)
6-8 potatoes peeled, and cut in half lengthwise
1 pound baby carrots
1 delicious (or other sweet) apple, cut in eighths
water

Preheat oven and roasting pan to 350*.
Salt and pepper one side of the roast.
Place seasoned side of roast down on preheated pan.
Bake for 20 minutes
Season top side of roast
Turn roast over and decrease oven heat to 325*
Roast for about 2 1/2 hours at 325* (longer time if larger roast)
Turn roast over, and add vegetables around base of roast in pan - with potatoes on bottom, covered by the carrots and at least 2 pieces of the apple on top of the roast.
Add hot water to depth of about 1"
Cover; bake for additional hour or hour and 15 minutes or until vegetables are done and meat shreds easily.
Check water level occasionally - do not let it to go dry

A 4# roast will yield a terrific meal for 8 and enough leftovers for barbecued pork sandwiches the next night and lunch for 1 or 2 the day after

#2 pencil day???
Anyone know what happened to Empire #2 pencils?
The kind with the easily melted lead?

I kinda carry a pencil point from one in my right forearm.

Layered Peach Dessert Recipe
for 4 servings:

1 1/2 c Plain flour
1/2 c Chopped pecans
1/4 c Packed brown sugar
1/2 c Melted butter
8 oz Cream cheese, softened
2 c (3c) Peaches & sugar
1 3/4 c Powdered sugar
1/2 ts Almond flavoring

FOR CRUST:
Combine flour, sugar and pecans. Add the butter. Mix well and press mixture in bottom of 13 x 9 baking dish.
Bake at 350F for 18-20 minutes. Cool.

FOR FILLING:
Beat cream cheese and powdered sugar at medium speed until light and fluffy.
Fold in whipped topping and almond flavoring.
Drain peaches and add to whipped topping mixture.
Spoon over cooled crust and chill for several hours.

I like no.2 pencils better thank no.1 pencils, the lead is softer so it makes a darker line. Makes pretty nice pencil drawings.
