Water Lilies

If you have forgotten water lilies floating
On a dark lake among mountains in the afternoon shade,
If you have forgotten their wet, sleepy fragrance,
Then you can return and not be afraid.

But if you remember, then turn away forever
To the plains and the prairies where pools are far apart,
There you will not come at dusk on closing water lilies,
And the shadow of mountains will not fall on your heart.

Grits and Sausage Bake

1 package (16 ounces) breakfast sausage, cooked, drained and crumbled
3 cups water
3/4 cup ALBERS Quick Grits
2 cups (8 ounces) shredded sharp cheddar cheese, divided
2/3 cup (5 fluid-ounce can) CARNATION Evaporated Milk
1/4 teaspoon garlic powder
1/8 teaspoon hot pepper sauce (optional)
2 large eggs, lightly beaten


PREHEAT oven to 350º F. Grease 8-inch-square baking dish.
BRING water to a boil in medium saucepan; slowly stir in grits. Cover; reduce heat to low. Cook, stirring occasionally, for 5 to 6 minutes. Add 1 1/2 cups cheese, evaporated milk, garlic powder and hot pepper sauce; stir until cheese is melted. Add sausage and eggs; stir well. Pour into prepared baking dish.

BAKE for 1 hour. Top with remaining cheese. Bake for an additional 5 to 10 minutes or until cheese is melted and golden brown. Let cool for 10 minutes before serving. Season with ground black pepper.

NOTE: Batter can be made the day before; cover and refrigerate. Let stand at room temperature for 30 minutes before baking.

Preparation Time 15 mins.
Cooking Time 75 mins.
Cooling Time 10 mins.

CHARITY


A wealthy trial lawyer was riding in his limousine when he saw two men
along the roadside eating grass. Disturbed, he ordered his driver
to stop and he got out to investigate.

He asked one man, "Why are you eating grass?"

We don't have any money for food," the poor man replied. "We have
to eat grass."

Well then, you can come with me to my house and I'll feed you,"
the lawyer said.

But sir, I have a wife and two children with me. They are over
there, under that tree. "Bring them along," the lawyer replied.

Turning to the other poor man he stated, "You come with us also."

The second man, in a pitiful voice then said, "But sir, I also have
a wife and SIX children with me!"

Bring them all, as well," the lawyer answered.

They all entered the car, which was no easy task, even for a car as
large as the limousine.

Once underway, one of the poor fellows turned to the lawyer and
said, "Sir, you are too kind. Thank you for taking all of us with you."

The lawyer replied, "Glad to do it. You'll really love my place;
the grass is almost a foot high!"

Whether I am on the ocean
or in the jungle wearing greens,
Giving aid to my fellow man,
be it Sailors or Marines.

So the next time you see a corpsman
and you think of calling him "squid",
think of the job he’s doing
as those before him did.

And if you ever have to go out there
and your life is on the block,
Look at the one right next to you...

My 17 year old nephew has written a few that are pretty good. He is going to get me a copy of them and I will post a couple. I'm not sure whether I can find a graphic to go with them.
