The problem when cooking bacon is that it heats up too fast. The result is that it can often be quite brittle and lacking in flavor. The best way to resolve this problem is to SLOOOOOW cook the bacon in water as you can see in this video. The result is not only bacon in which the flavor is highlighted but with a great texture. Once you try this water method of cooking bacon you won't go back to your old way of cooking bacon again.

    If you are skeptical about this method of cooking bacon then I suggest you try it for yourself. Believe me, it makes a YUUUUUUGE difference. Brittle bacon is something I hate.

put bacon on a cookie sheet (with sides)
cook to desired crispness
best way to cook bacon ( and the grease can be poured into a tupperware container and refrigerated for later use )

    I tried water cooking bacon a few times. It is crispier but has a more burnt flavor. Maybe you should check your water. I've been doing this quite a bit for the past month and NOT ONCE has my bacon had a burnt flavor. Orrrrr.... Maybe you should check your bacon.

    1) Cook bacon the regular way in the fry pan, paying attention to take it out before it gets too crisp
2) Cook eggs in the bacon fat, set aside
3) Take baked potato from last night, slice, and fry in bacon fat. It will soak up the fat.
