When I was a young buck I did not cut much cheese, so I cut it with gusto.
As a silverback, I cut more cheese but also more carefully.

Same here. After we cut a slab of Romano, we wrap in plastic and put it in the fridge and have never had any problem even if it stay there a month.

R.B. Unripe cheese. Amazing! I did not know that! Learned something new today!

I do not generally buy Artisanal cheese from a Cheese Monger. I would like to but its usually a bit pricey. Our cheese is usually Walmart or maybe the grocery store white and presliced, or plastic jars of Parmesan (Not really Parmesan and containing wood dust to make it pourable.)

Charles de Gaulle once famously said, "How can anyone govern a nation that has two hundred and forty-six different kinds of cheese?" We poke fun at the French calling them cheese-eating surrender monkeys, but they do know their fine food.

Whenever I stop at a Publix grocery store I get stuck at their display fridge full of international cheese with the atrocious prices. I try to move yet still stand there mesmerized, determined to bring a spare $100 next time and grab a few.

Found a page about good Cheese-of-the-Month Clubs (yes, still a thing). Isn't that grate?

I can go about 10 miles in any direction from my farm for All The Cheese. I like to make my own butter but haven’t attempted anything but the ‘soft’ cheeses so far.
